Stephanie Dillingham started Three Square Nutrition in 2013 to help people struggling to deal with food allergies, celiac disease, and for those wanting to learn more about healthy eating. As a mother of a young child with food allergies, and as someone with celiac disease herself, Stephanie provides first hand experience dealing with restricted diets. Stephanie focuses on plant based, whole grain diets, and is currently studying to be a registered dietitian.

Look what we had for dinner. Chicken and mozzarella meatballs subs on ciabatta and pasta sauce. We had spring mix salad and zucchini and yellow squash sautéed with onion, garlic, and basil as a side. 😋. It was a hit with the whole fam.

Any other moms out there feeling swamped this time of year with end of school activities? I love these pupusas for quick dinners on nights like tonight. (Not a sponsor, just a happy customer). I bake them in the oven instead of frying them and pair with cabbage mixed with salsa... the way they’ve been served to us at the farmers market. Quick and super easy!!

Do you make double batches of meals on weekends to get you through the week? We made a double batch of this grilled chicken salad with guacamole (think Mexican Caesar salad) for dinner last night. I’m eating it real quick before I head to the food bank I volunteer at on Mondays.

Who else loves fall veggies? I get a farm share that lasts all of the way until December and fall vegetables are some of my favorites. I made a peanut Asian slaw with a giant Napa cabbage for dinner on Sunday. Also, fried rice with edamame, carrots, more Napa cabbage and onions too. The recipe for the slaw is from Martha Stewart if anyone wants to try it. It’s called Kale Slaw with peanut dressing and is online. I just substituted the Napa cabbage for the kale. I like to let it sit in the fridge for a few hours before I serve it so the cabbage really soaked up the peanut flavor. 😋

I did much better with exercising this week, and was so close to meeting my goal. I exercised for a total of 285 min. My goal was 300... not too bad. I’ve found that making a plan for exercise every single day is critical for me because inevitably something comes up and interrupt, but having a plan every day means I can get out there at least 5 days a week usually. I’ve been trying to enjoy the nice weather while it last. The sky and moon were so pretty this morning! How do you all make exercise a priority in your lives, or do you struggle with it like me? I’d love to hear your tips.

I’m taking a Nutrition Counseling course right now, and we have to do a self-directed change project. For my project I’m trying to prioritize exercise even when I’m really busy and stressed out! The last few months have been a little crazy. My husband started a new job and I started a Master’s program and I let exercise take a backseat a bit. My goal is to exercise at least 5 days a week for 300 total minutes. Help encourage me friends! This pic was from my run yesterday. ☀️⛰🎈

The raspberries I have growing in my garden are one of my favorite summer treats. The canes we planted a few years ago are finally paying off. We have red and black raspberries.
