Warm Red Potato Salad with Sauteed Leeks, Arugula, Black Olives and Capers...toss together with olive oil, balsamic vinegar, lemon juice and zest, whole grain mustard and anchovies(optional)

Zuchinni, Mushroom and Basil Quesadillas...saute grated zuchinni with sliced mushrooms and fresh basil. Spoon onto one half of a warm quesadilla with grated jack cheese. Grill on both sides and serve with sour cream, hot sauce and basil garnish
