Happy November 1st! 🍂

We’ll see how long my pumpkins last until my love of the coziness of Christmas takes over! But I’m still living up delicious warming fall meal preps, including this beauty from last week.

Happy Monday friends! ☀️

The weather is warming up, which means it’s time to cool down the meals. This time of year I try to minimize the amount of stove and oven time since we don’t have AC, so lots of cold salads return to the menu. So get ready!

Meals:
▪️Creamy Chocolate Overnight Oats with GF oats 🌾, topped with cashewmilk yogurt 🍦 + granola + strawberry 🍓
▪️Quinoa and Chickpea Salad with Green Goddess Dressing + hardboiled eggs 🥚 + carrots 🥕 + grapes 🍇 + .snacks coconut 🥥 bar
▪️Sesame Lentil Noodles 🍜 with Korean Beef + edamame 🍃+ avocado 🥑
▪️Cold Bean salad with carrots 🥕 and hummus + cucumbers 🥒 + cheese 🧀 + crackers
▪️Shrimp Tacos 🌮 with Peppers and onions 🫑🧅+ Shrimp 🍤 + avocado 🥑 with a street corn 🌽 salad

Serving Up Roasted realness…

I’ve clearly been watching way too much (is there anything as too much??) Drag Race recently 😂

Loving this roasted bowl with roasted cubed sweet potatoes, roasted broccoli, and roasted chickpeas with Primal Kitchen] Buffalo sauce.

🍠Sweet Potatoes🍠:
Wash sweet potatoes and dice into cubes. Toss with olive oil and salt. Bake on a parchment lined baking tray at 400* for 35-45 min or until reach desired crispness.

🥦Broccoli🥦:
Rinse broccoli and cut florets into small bite size pieces. Toss with olive oil, salt, and pepper. Bake on a parchment lined baking tray at 400* for 20 min.

Chickpeas:
Drain canned chickpeas and lay out on a dish towel, pat dry. Let sit for 30 min-1 hour to dry out. Toss in a bowl with olive oil and salt to taste. Bake on a parchment line baking tray at 375* for 25-30 min or until crispy and golden brown. Once cooled, toss with Primal Kitchen] dairy free Buffalo sauce.
