Having a mental “database” of whole food, plant based food substitutions is one of the most powerful tools you can attain when transitioning to this way of eating. 🛠
For example:
A version of this Roasted Thai Sweet Potato Salad recipe showed up on the scene at our family gatherings years ago, but originally calls for animal bacon. 🤔
A simple swap in of tempeh bacon still provides the ‘bacon-y’ flavor characteristics (smoke, umami) while also adding a rich plant protein source to the dish. 🌱💥
Ingredients 🍠🌶🥜🌿🥓
Sweet Potatoes; cubed & roasted
Red Bell Pepper
Scallions
Toasted Peanuts (cashews if allergic)
Tempeh Bacon; cooked until crispy
Fresh Lime Juice
Cilantro
Toasted Sesame Oil
Salt and Pepper to taste
Chili Flakes to add heat (optional)
+Chef points: Ground Kaffir Lime Leaves
Makes a great dish-to-pass, OR, drop this salad over a bed of greens, top with some sprouts and a drizzle of Thai peanut dressing to make a meal of it! 🥗🙌
