Here's a quick recap of our recipe with a Southwest twist:
🔸 Thinly slice 2 medium-sized red onions and place them in a jar.
🔸 In a saucepan, combine apple cider vinegar, water, salt, whole black peppercorns, red pepper flakes, crushed garlic, bay leaf, cumin powder, dried oregano, 1/4 tbsp stevia (optional) and dried chipotle peppers for that smoky kick (optional).
🔸 Bring the mixture to a gentle boil, then pour it over the onions in the jar.
🔸 Let it cool to room temperature, seal the jar, and pop it in the fridge for at least 24 hours to let the flavors develop.
