So many ways to enjoy more veggies! Try this Moroccan inspired roasted veggie salad for dinner. So dang delicious! A spice mix of cumin, coriander, and cinnamon. A dressing of fresh squeezed orange juice, tahini, and spices. Tossed with roasted cauliflower, carrots, and butternut squash. Then add kale, quinoa, chickpeas, and golden raisins. Not the fastest salad ever tossed together. But the 50 minutes of kitchen time (40 minutes to roast veggies) after work was well worth it. Definitely.
