Keto Southwest Salmon with Salsa

The Preparation

Salmon:
8-ounce salmon
1 tablespoon olive oil
1 teaspoon cumin
1 teaspoon chili powder
Salt and pepper to taste
Salsa:
1 medium avocado
1 medium fresh tomato
1 medium jalapeno pepper
1 medium onion
1 medium lime
2 tablespoons fresh cilantro, chopped
The Ex*****on

Measure out and prepare all of the ingredients.
In a bowl, combine the seasonings: olive oil, cumin, chili powder, salt, and pepper. Stir to combine well.
Completely spread the seasonings onto the salmon filets with a brush. Cook the salmon over a frying pan on medium heat and let cook for 5-8 minutes on both sides.
Chop the onion, and slice the avocados, tomato, and jalapeno.
Layer them in a serving bowl.
Mix them together and garnish with the chopped parsley.
Top with the salmon. Serve and enjoy!
Notes

This makes a total of 2 servings of Keto Southwest Salmon with Salsa. Each serving comes out to be 494 calories, 35.3g fat, 10.4g net carbs, and 28.7g protein.

6 cobs of corn (about 5 cups of kernels, or 3 15-ounce cans of corn)
½ pint (1 cup) cherry tomatoes
½ cup diced red onion
⅓ cup roughly chopped fresh basil
2 tablespoons apple cider vinegar
2 tablespoons olive oil
¼ teaspoon garlic powder
¼ teaspoon chili powder
½ teaspoon kosher salt
Fresh ground black pepper
½ cup feta cheese crumbles, for garnish (optional)

Instructions
1. Cook the corn: Bring a large pot of water to a boil. (This takes about 15 to 20 minutes, so plan accordingly.) Shuck the corn, removing the silk. When the water is boiling, place the corn cobs in the pot. Boil covered for 4 minutes, until bright yellow. Run under cool water until cool enough to touch. (Alternate method: Roast the corn in the oven or use canned corn.)
2. Cut the corn: Find a bundt pan, or large-rimmed baking sheet or pan. Place the corn into the hole in the bundt pan or hold the corn vertically inside the baking sheet, then use a chef’s knife to slice down and remove the corn from the cob (the sides of the pan catch the kernels that fly when cutting; more details here.)
3. Chop the vegetables: Meanwhile, dice the cherry tomatoes. Finely chop the red onion. Chop the basil.
4. Mix in the dressing: In a large bowl, mix all vegetables with apple cider vinegar, olive oil, garlic powder, chili powder, salt, fresh ground black pepper to taste, and optional feta crumbles. Stores are refrigerated for up to 3 days.

Crispy Tofu and Bok Choy Salad

The Preparation

Oven Baked Tofu

15 ounces extra firm tofu
1 tablespoon soy sauce
1 tablespoon sesame oil
1 tablespoon water
2 teaspoons minced garlic
1 tablespoon rice wine vinegar
Juice ½ lemon

Bok Choy Salad

9 ounces bok choy
1 stalk green onion
2 tablespoons chopped cilantro
3 tablespoons coconut oil
2 tablespoons soy sauce
1 tablespoon sambal olek
1 tablespoon peanut butter
Juice ½ lime
7 drops liquid stevia

The Ex*****on

Press the tofu dry, about 5-6 hours.
Combine all of the ingredients for the marinade (soy sauce, sesame oil, water, garlic, vinegar, and lemon).
Chop the tofu into squares and place in a plastic bag along with marinade. Let this marinate for at least 30 minutes, but preferably over night.
Pre-heat oven to 350F. Place tofu on a baking sheet lined with parchment paper (or a silpat) and bake for 30-35 minutes.
Mix all of the salad dressing ingredients together (except bok choy) in a bowl. Add cilantro and spring onion.
Chop the bok choy into small slices, like you would cabbage.
Remove the tofu from the oven and assemble your salad with tofu, bok choy, and sauce. Enjoy!

Fresh bell pepper Basil Pizza

Pizza Base
6 ounces mozzarella cheese
½ cup almond flour
2 tablespoons psyllium husk
2 tablespoons cream cheese
2 tablespoons fresh Parmesan cheese
1 large egg
1 teaspoon Italian seasoning
½ teaspoon salt
½ teaspoon pepper

Toppings
4 ounces shredded cheddar cheese
1 medium vine tomato
¼ cup Rao’s Marinara Sauce
2/3 medium bell pepper
2-3 tablespoons fresh chopped basil

The Ex*****on

1. Preheat oven to 400F.

2. Microwave mozzarella cheese for 40-50 seconds or until completely melted and pliable.

3. Add the rest of the pizza ingredients (EXCEPT for toppings) to the cheese and mix together well with your hands.

4. Using your hands or a rolling pin, flatten the dough and form a circle.

5. Bake for 10 minutes, and remove pizza from the oven. Top the pizza with the toppings and bake for another 8-10 minutes.

6. Remove pizza from the oven and let cool.

Vegetarian Keto club Salad

2 tablespoons sour cream
2 tablespoons mayonnaise
½ teaspoon garlic powder
½ teaspoon onion powder
1 teaspoon dried parsley
1 tablespoon milk
3 large hard boiled eggs, sliced
4 ounces cheddar cheese, cubed
3 cups romaine lettuce, torn into pieces
½ cup cherry tomatoes, halved
1 cup diced cucumber
1 tablespoon dijon mustard

1. Prepare the dressing by mixing the sour cream, mayonnaise, and dried herbs until combined.

2. Add one tablespoon of milk and mix. If the dressing seems too thick, add another tablespoon of milk. Don’t forget to add another tablespoon of milk to the final fat/protein/carb count if you do!

3. Layer your salad with the fresh veggies, cheese, and sliced egg. Add a spoonful of Dijon mustard in the center.

4. Drizzle with the prepared dressing, about 2 tablespoons for one serving, then toss to coat.

This makes a total of 3 single-servings of Vegetarian Keto Club Salad with 2 tablespoons of dressing per serving. Each serving comes out to be 329.67 Calories, 26.32 g Fat, 4.83 g Net Carbs, and 16.82 g Protein.

Ingredients

2 c. shredded low-moisture mozzarella
1 c. almond flour
1 tsp. kosher salt
1 tsp. garlic powder
1/2 tsp. chili powder
Freshly ground black pepper

Directions
Step 1
Preheat oven to 350°. Line two large baking sheets with parchment paper.

Step 2
In a microwave safe bowl, melt mozzarella for about 1 minute 30 seconds, stopping to stir every 30 seconds. Add almond flour, salt, garlic powder, chili powder, and a few cracks black pepper. Using your hands, knead dough a few times until a smooth ball forms.

Step 3
Place dough between two sheets of parchment paper and roll out into a rectangle ⅛” thick. Using a knife or pizza cutter, cut dough into triangles.

Step 4
Spread chips out on prepared baking sheets and bake until edges are golden and starting to crisp, 12 to 14 minutes.

Tomato Basil and Mozzarella Gallett

The beauty in a galette is that they don’t have to be beautiful to be delicious. In fact, the more rustic they look, the fancier the appear. This imperfect crust method is great for gluten free baking because it’s so forgiving in its looks and versatile in the fillings. You could go with a sweet “dessert” galette and fill it with low-carb fruits, or even a sweetened cream cheese filling, but today I want to share that will make you think you’re eating a the real deal….but without all of those pesky carbs!
