❤️🥗
A little meal prep, a little creativity & a reminder that healthy eating doesn’t have to be complicated!
This week’s menu includes chocolate raspberry Japanese sweet potato bowls & a new recipe inspired by my latest cookbook, PlantYou Quickies!
I’ve tried two recipes so far & I’m impressed! The first was an enchilada casserole (I’ll share that one later) & this week’s experiment was the Herbalicious Quinoa Salad Jars.
Of course, I made it my own! 😉
I added chickpeas & edamame for extra protein, along with quinoa, white beans, cucumbers, purple cabbage, red onion, pistachios, fresh parsley, basil & a lemon tahini dressing. So much color, texture, fiber & plant diversity in one jar!
And the sweet potato bowls? An old favorite with a little twist! I blended in fresh blackberries and topped them with raspberries and dark chocolate chips.
Here’s something I always remind my clients: Don’t overwhelm yourself trying to change everything at once.
I stuck with a familiar breakfast & experimented with ONE new lunch recipe.
A few things to remember:
▪️Try one new recipe at a time.
▪️Make it your own! Don’t like an ingredient? Swap it out. (Sorry, mint belongs in my chewing gum. 😂)
▪️Think COLOR & VARIETY for your gut microbiome.
▪️Aim for a variety of colorful, fiber-rich foods, and don’t forget your protein and healthy fats!
▪️Most importantly, enjoy the process!🙂
Taking control of your health doesn’t have to mean complicated recipes, rigid rules or spending your entire weekend in the kitchen.
Find inspiration, make it your own & keep it simple enough to actually stick with. ❤️
The best part? Meal prep was done with enough time left to enjoy a beautiful evening relaxing in my tree swing. 🌳☀️
