Homemade comfort food in just 20 minutes?! YES, please!

Who says cooking from scratch has to take all evening?!

Tonight I put TWO of my homemade dry mixes to the test that I’ve been showing you all how to make in previous videos—our chili seasoning and cornbread mix—and had a warm, hearty dinner on the table in just 20 minutes, start to finish! 🙌🏼

Simple pantry ingredients, no unnecessary additives, and a whole lot of homemade goodness. ❤️

This is exactly why I love keeping homemade dry mixes stocked in my pantry. Convenience without sacrificing homemade!

Both dry mix recipes are available here on Neil Homestead under reels if you’d like to make your own the recipes are in the captions.

Italian Sausage Tortellini Soup 🥣

Ingredients

12 oz mild Italian sausage
1 tablespoon olive oil
1 tablespoon Italian seasoning
1 teaspoon paprika regular or smoked
3 whole carrots chopped
5 cloves garlic minced
6 cups chicken broth
8-12oz tortellini I used three-cheese tortellini
4 oz fresh spinach
½ cup heavy cream
4 tablespoons fresh thyme

Instructions:

1. Heat olive oil in a large, high-sided pot over medium heat. Add crumbled sausage.

2. Cook for several minutes over medium heat, stirring until the sausage is cooked through. Drain all grease. Sprinkle with Italian seasoning and paprika.
Add chopped carrots, and minced garlic.

4. Add 6 cups of chicken broth. Bring to boil. Mix everything well.

5. Once the soup is boiling, reduce to simmer, cover the pot with a lid, and cook for 15 minutes until the carrots are cooked through.

6. Add tortellini to soup in the pot, cover with a lid and boil for 10 minutes over medium heat. Note: Use the cooking time indicated on the tortellini package as your guide.

7. Add spinach right in the end, stir in until it slightly wilts. Remove the soup from heat. Add the cream and stir it in.

8. Season with salt and more Italian seasoning if needed. Top with fresh thyme.

9. Remove from heat, let cool slightly and enjoy.

We’ve been a little quiet around here this weekend. Sickness made its way through our house, so we’ve been resting, taking things slow, and letting everything else wait. 🤎

Today the rain seemed pretty fitting—a quiet day at home to rest and reset.

Hopefully we’re all back on our feet soon because I have some fun fall things planned for the homestead page that I can’t wait to share with you. 🍂

For now, we’re enjoying the sound of the rain and a much-needed slow day at home.

Did anyone else enjoy some cozy time at home this weekend? ☕️
