I just foraged nettles for the first time with my friend, Ingelis. Stinging nettles grow in clusters and are one of those overlooked, nutrient-rich wild foods that are actually worth paying attention to. Once cooked, the sting disappears, and they become incredibly versatile.

I’ve been using them to make a nourishing broth for soups and meats, cooking and freezing the greens, and adding them into meals anywhere I’d normally use spinach.

My girl, Ingelis, foraged some stinging nettles and made a delicious soup. I really enjoyed my first bowl (there will be more to come). Wednesday, weather permitting, we are going to find more of these stinging nettles to cook up! Stinging nettles are a wild green superfood that has anti-inflammatory compounds and may even help counteract seasonal allergies. They are a good source of vitamins A, C, and K, along with minerals like iron, calcium, magnesium, and potassium.

These easy-to-make Egg Bites have about 15 grams of protein and make a quick snack or meal. If you are trying to fill up on more protein and less empty carbs, these will keep you sane!

Ingredients:
��1 lb. of cooked breakfast meat
��12 large eggs
��16 oz cottage cheese (small curd works best)
��1.5 cups shredded cheese (cheddar, Colby jack, or a mix)
��½ tsp salt
��½ tsp pepper
��Optional add-ins: diced peppers, onions, spinach or broccoli

Mix all ingredients and pour into greased silicone cupcake trays (you will need about 12-15 cupcake spaces). Silicone allows the bites to pop out easily! Bake at 350 degrees F for about 25 minutes or until slightly toasty on top. Poke with a toothpick to make sure the insides are done.
