Cajun Ranch Chicken BLT 🤤 Went from ā€œugh we have nothing good for lunchā€ to ā€œthat was the best sandwich I’ve had in a long timeā€ real quick! šŸ‘ŒšŸ¼ All it took was a little creativity. I used a little bit of leftover grilled chicken (Cajun marinade) and a few slices of leftover bacon from our breakfast on Sunday that we were too full to eat. Turned it into a toasty sourdough spicy Cajun chicken ranch BLT šŸ”„šŸ¤¤šŸ„Ŗ
Here’s the simple recipe:
• lightly toast sourdough sliced bread
• spread ranch on bread
• layer lettuce, tomato, bacon (can use precooked chicken bacon if that’s easier to keep on hand!), Cajun grilled chicken (or any other leftover chicken you have!)

Enjoy with a juicy fresh peach on the side, trust me šŸ˜‹

This lunch was not only delicious, but it also provided carbs, protein, fats, and fiber, plus a variety of micronutrients, all of which made this so satisfying and nutritious.

Sick of eating the same old things every week? Steal my balanced dinner ideas to mix things up and try something new to keep your family happy, healthy, and satisfied.

We like to get premarinated chicken from the store but if you want to be in control of the salt content you totally can make your own marinades easily at home. We paired with a variety of mixed veggies - zucchini, peppers, and broccolini - all tossed in olive oil with garlic powder, kosher salt, black pepper, and sometimes I’ll either add crushed red pepper or chili powder.

A meal both me and my toddler love ā˜ŗļø Boxed Mac n cheese (this sharp cheddar Cabot Mac is insane omg) with a strip steak and broccoli (roasted, steamed - whatever you like). I used frozen broccoli this time to make things so super fast and easy

Is it even summer without occasional burger nights? I add veggies on the side since the veg on the burger isn’t really enough to support my digestion or micronutrient needs for the day. I did snap peas but you could do a variety of other raw veggies or even grilled corn or side salad. Also does anyone else like ketchup on potato chips? Hubby thinks I’m cray lol

One pan chicken sausage and veggie sautƩ is the easiest thing ever and is so yummy tossed over a bowl of whole grains (90 second microwave packets for the win!) for a quick balanced meal.

My husband Anthony is soooo good at making the perfect crispy skin chicken - he gets all the credit here. We like to pair it with sautĆ©ed green beans and some fresh bread for carbs (yes bread is our dinner carb a lot, he’s Italian lol)

Spicy marinated chicken breasts topped with a pineapple salsa - oh wow what a combo. Must try šŸ‘ŒšŸ¼ Paired with grilled corn makes it the best summery meal

My husband and I oftentimes share one steak that we slice and serve over a big salad. Try my homemade dressing from my recent reel!

Yes it’s ok to order sometimes! I add raw veggies on the side of my pizza to support my satisfaction, digestion, and overall health. Do you use ranch for your pizza? I do every time šŸ„°šŸ˜‹ ok now I want pizza so bad.

You don’t have to eat chicken, broccoli, and rice every day on repeat to be healthy… and no, you don’t have to eat a boring salad everyday for lunch either. You should be able to eat foods that you fully enjoy that ALSO support your health goals. You don’t have to feel restricted or miserable with your food choices for the sake of being healthy. If you need inspo for meals and snacks that keep you on track with your health but are still fun to eat, hit that follow button. šŸ‘‹
