Honey & mustard chicken 🍯
Love trying out new recipes especially when they turn out gorgeous.
Marinate your chicken strips in a tsp of olive oil, slices of ginger and garlic, salt, pepper and a tsp of mustard powder for as long as possible (preferably overnight). Brown in a pan and then put it in the slow cooker with 3 tbsps of honey, 20g of mustard and half a mug of chicken stock. Cook on low for 6-8 hours and serve with basmati rice and salad.

I’ve been contemplating if I should post this or not since I’m not very active on here anymore. But one thing is certain is that even though I’m not comfortable in sharing as much as I used to, it always helped posting about my goals as it always helped me achieve them!
Last week I went back to group after being away for almost 4 months. I simply needed a break. I was 9 lb above my target and in those 4 months I only gained 2 lb. I had hoped to get back to target before coming back to group but that didn’t happen so I’m glad that I only gained a small amount.
This week I lost 2 lb!! Which mean I have 9 lb to get back to target and only 6 to get back into target range. I’d LOVE to be at my target weight in the next 6 weeks but not putting pressure on myself.
My biggest problem over the past year and not being able to get back to my target weight is simply because I haven’t been able to be on plan 100% for more than a few weeks. Over the year I have felt at times overwhelmed and that getting back to my target is unachievable. But right now I know I can do it!!
So if you’re struggling at the moment know that you’re not alone. Remind yourself what you have achieved. Be kind to yourself ❤️

Hey everyone 👋
I know it’s been AGES! I’m not back to posting regularly but I do like to post new recipes I try to have them saved on here. Yes, it’s been ages since I tried something new 🤣
So this is chicken satay. Cut up two chicken breasts and marinated the pieces in 1 finely chopped garlic, 2 tbsps of dark soya sauce, 1 tsp cumin, 2 tsps sweetener. Marinade over night if possible and then fry in a tsp of sesame oil and chuck into the slow cooker with this sauce and cook on low for 6 hours.
Sauce:
•3 tbsps of peanut butter powder
•1 finely chopped garlic clove
•1 tbsp of dark soya sauce
•tbsp of sweetener
•150ml light coconut milk
•a few tbsps of water
My recipe came to 10.5 syns so only 2.5 syns per portion.

Lentil chilli con carne, rice, yoghurt and salad 🥗
To make lentil chili I chucked these ingredients into the slow cooker for 8 hours.
•1 mug of red lentils
•2 cans of chopped tomatoes
•1 carton of passata
•1 small can of sweet corn
•1 can of red kidney beans drained
•3 carrots blended
•chopped peppers
•1 sweet potato cut into cubes
•1 stock cube
•2 tsps of chilli power, 1 tsp of cumin and 1 tsp of paprika, salt and pepper

Pancakes for breakfast this morning again. This week it’s either been pancakes or soft boiled eggs on toast.
So glad I made a big batch of these earlier this week.
Evelya’s back at preschool but still has an annoying cough and Pavlos is still poorly and sleeping on the sofa. I should get up and start doing some housework but I think he needs me by his side even in his sleep 🤣🤪
We’ll be at home all morning as the dust levels are on high again...

So yesterday I made a big batch of pancakes for me and the kiddos to eat over the next couple of days.
Evelya and Pavlos are both still poorly but Evelya is on the mend and hopefully will be back in preschool tomorrow 😀 She wanted to go in today but I’d prefer her to have had 48 hours of antibiotics before going back.
So a really easy breakfast for me this morning which will keep me going for hours.
To make one batch of pancakes I blend 40g oats and then add a big whisked egg, 1/2 tsp of baking powder, 30g of yoghurt and 1 tsp of sweetener/sugar. I let the mixture stand for 10 minutes before cooking it.
Topped mine with peanut butter and pancake syrup, banana, strawberries and blueberries 🍌 🍓 🥞 🥜
