Budget friendly Vegan & Gluten free korma curry.

We used butternut squash but any squash will do. The sweetness of squash with creamy korma goes lovely.

As part of our budget Lockdown meals, this curry only has 6 staple ingredients so easy to make. Sub the squash for sweet potato or any veggies-fresh or frozen x

🔅1 x Butternut squash.
🔅2 x Onion
🔅2 tbsp Korma Curry paste or powder
🔅1 tin of Tinned tomatoes
🔅750ml Veggie stock
🔅150g Red or split lentils
That’s it, spinach is optional and you can use rice, couscous or any grain to suit your diet.
Add it all in the slow cooker for 6 hours, easiest dinner ever ###
