Tequila lime shrimp 🦐

Cook time: 15 min
Serving size: 3

12 oz (340g) peeled and deveined shrimp

2 pinches salt

3 dashes ground black pepper

1/4 teaspoon paprika

1 tablespoon olive oil

2 cloves garlic, minced

2 tablespoons tequila

1 1/2 tablespoon lime juice

1 tablespoon chopped cilantro leaves

INSTRUCTIONS

Season the shrimp with salt, pepper and paprika.

Heat up a skillet (cast-iron skillet preferred) and add the olive oil. Saute the garlic for a little bit before adding the shrimp. Continue to cook the shrimp until they turn slightly charred and burned. Drizzle in the tequila, toss the skillet a few times. Add the lime juice, stir to combine well.

Turn off the heat and add the cilantro. Serve the tequila lime shrimp with Mexican rice or wrap with warm tortilla.

Jalapeno Popper and Bacon Dip

A fast and easy dip that has great depth of flavor. Use veggies instead of crackers to remain low carb! Or make some chips by baking low carb wraps!

Ingredients
•1 8 oz cream cheese
•1 cup cheddar cheese shredded
•1 cup mozzarella cheese shredded
•1 tbsp ranch seasoning mix
•2 jalapeno peppers, seeded and diced (add some seeds in for spicier dip)
•⅓ cup cooked and crumbled bacon (keep a tbsp for garnish)
•2 cups sour cream
•2 tbsp chopped onions
•1 tbsp parsley

Instructions
1.In a large bowl, mix all the ingredients together, until well blended.
2.Spread on the bottom of a 9×9 baking dish, top with crumbled bacon.
3.Bake in the oven at 350 for 15-20 minutes until edges are golden brown.
4.TIP: Cook in two smaller dishes (reduced cooking time a few minutes) I like the dip best when HOT and cheesy right out of the oven. If I cook it in two pans at different times I can put one out at the start of the party, and pull the second one out once the first one is gone.

Low Carb Cheesesteak Skillet

Ingredients:

1 1/2 lbs ground beef
1 cup red, orange and yellow pepper strips
2 cups green pepper strips
1/4 cup onion, sliced
1/2 cup mushrooms, thinly sliced
3 oz provolone cheese
3 oz gruyere or swiss cheese
1 tablespoon steak seasoning
1 tablespoon olive oil

👉🏻👉🏻👉🏻you can play around with the amount of veggies. Less will be less carbs, for example.

Directions:

1.) Heat up a large oven proof skillet and add in the ground beef.

2.) Sprinkle the steak seasoning on top and brown the meat.

3.) In the meat time heat up another large skillet and add in the oil and vegetables. Saute until the vegetables are cooked through.

4.) Pour the cooked vegetables onto the ground beef and mix well.

5.) Sprinkle cheeses over top and set under the broiler. Broil until the cheeses are melted and starting to brown.

Serve as is, over lettuce, or if not low carb, use buns or rice.

Melanie's Spinach Quiche

This recipe is very forgiving, so you can add or remove ingredients according to your taste! To make it lower carb, simply omit the crust and use a pie baking dish.

Ingredients:

3 TBSP butter

1 small onion, chopped

3 cloves garlic, chopped

1 (10 ounce) package frozen chopped spinach, thawed and drained

1 (4.5 ounce) can mushrooms, drained

1 (6 ounce) package herb and garlic feta, crumbled

1 (8 ounce) package shredded Cheddar cheese, divided

salt and pepper to taste

1 deep-dish pie shell

4 eggs

1 cup milk

Directions:
Preheat the oven to 375 degrees F (190 degrees C).

Melt butter in a medium skillet over medium heat. Add onion and garlic and saute until lightly browned, about 7 minutes.

Stir in spinach, mushrooms, feta, and 1/2 cup Cheddar. Season with salt and pepper. Spoon mixture into the pie shell.

Whisk eggs and milk together in a medium bowl until combined. Season with salt and pepper. Pour slowly over the spinach mixture in the pie shell, allowing egg mixture to thoroughly combine with spinach mixture.

Bake in the preheated oven for 15 minutes. Sprinkle the top with remaining cheddar and bake until toothpick inserted in the center comes out clean. About 35 to 40 minutes. Allow to cool 10 minutes before slicing and serving.

Cauliflower Bread Sticks

Ingredients:
1 cup raw grated cauliflower or 100 grams (2 Greens)
1/4 cup egg substitute * you are able to add up to 2 oz of additional protein per Nutrition Support
1 cup shredded or 4 oz 2% light mozzarella, divided (1 Lean)
Garlic salt and Italian seasonings, to taste

Marinara Sauce
1/2 cup Italian diced tomatoes - less than 5 g of carbs per serving (1 Green)
You can also use Walden Farms Marinara Sauce, but 1/4 cup is considered to be 2 condiments and is not a vegetable. You would have to add a third of veggies to your meal if you choose this option.

Directions:
Puree Italian diced tomatoes in a small chopper. Set aside.

Preheat oven to 350. Mix cauliflower, 1/4 cup egg substitute, and 3 oz or 3/4 cup shredded mozzarella together in a bowl until combined. Line a 9 x5 loaf pan with parchment and lightly spray with Pam. Pour mixture into pan about 1 -1/2 inch deep. (It is okay if the mixture does not cover the entire pan). Bake at 350 for 30 min or until set. Lift the edges of the parchment and place bread with parchment on to cookie sheet. Carefully use a spatula to lift the edges of the dough off the parchment and flip the dough. Bake for an additional 15 minutes at 450 degrees. Take out of oven and with a pizza cutter, slice strips through set dough. Separate slightly. Sprinkle with garlic salt, Italian seasonings and 1 oz or 1/4 cup 2% reduced fat mozzarella or three cheese blend. Continue baking at 450 degrees for about 10 more minutes until cheese is melted. Serve with marinara sauce.

LOW CARB Southwestern Chicken Skillet

What you will need:
1 teaspoon chili powder
1 teaspoon ground cumin
1/4 teaspoon salt
4 small boneless skinless chicken breasts
2 teaspoons olive oil
2 garlic cloves, minced
1/2 cup salsa (I used my own homemade)
1 tablespoon Dijon mustard (very important imo to the flavor)
1 cup shredded cheese of your choice
2 tablespoons chopped green onions or 2 tablespoons cilantro

Directions:
Sprinkle chili powder, cumin and salt over chicken.
Heat oil in a large nonstick skillet over medium heat.
Add chicken and garlic; cook 5 minutes.
Turn chicken over.
Combine salsa and mustard; spoon over and around chicken.
Continue cooking, turning chicken and stirring sauce, 5 minutes or until chicken is cooked through.
Sprinkle cheese and onion (or cilantro) over chicken.
Continue cooking 1-2 minutes or until cheese is melted.
Only 2.7 g carbs per breast

No Bake Chocolate Peanut Butter Oat Bars

Ingredients

1 cup butter
1/2 cup packed brown sugar substitute (I use swerve)
1 teaspoon vanilla extract
3 cups quick cooking oats
1 cup lily's sugar free chocolate chips
1/2 cup natural peanut butter



How To Make No Bake Chocolate Oat Bars

Grease a 9×9 inch square pan.
Melt butter in large saucepan over medium heat. Stir in brown sugar and vanilla. Mix in the oats. Cook over low heat 2 to 3 minutes, or until ingredients are well blended. Press half of mixture into the bottom of the prepared pan. Reserve the other half for topping.
Meanwhile, melt chocolate chips and peanut butter in a small heavy saucepan over low heat, stirring frequently until smooth. Pour the chocolate mixture over the crust in the pan, and spread evenly with a knife or the back of a spoon.
Crumble the remaining oat mixture over the chocolate layer, pressing in gently. Cover, and refrigerate 2 to 3 hours or overnight. Bring to room temperature before cutting into bars.

INGREDIENTS
8 cheddar cheese slices (sliced ultra-thin)
HOW TO MAKE IT
Preheat oven to 300°F. Line a baking sheet with parchment paper.
Cut each cheese slice into 4 equal squares. Place the cheese squares in rows on the baking sheet. Using a fork, poke holes in the cheeses squars

Fajita Chicken Casserole (Keto Friendly)

INGREDIENTS
3 or 4 small chicken breasts (1 1/2 lbs – 750g) skinless, boneless – or 2 large chicken breasts, split lengthwise
2 bell peppers, red and green, seeded and cut into strips
1 medium onion, minced
1 teaspoon cumin powder
1 1/2 teaspoon chili powder
1 teaspoon garlic powder, or minced garlic
2 teaspoon paprika
Salt and fresh cracked pepper to taste
1 tablespoon vegetable oil
1 cup shredded Mozzarella (or your favorite cheese, Pepperjack, Monterrey Jack, Cheddar…)
Fresh chopped cilantro, or parsley, for garnish

DIRECTIONS
1. To make fajita chicken casserole recipe: Preheat your oven to 400°F (200°C). Lightly grease a baking dish.

2. Place chicken breasts on a shallow plate. Sprinkle cumin, chili powder, garlic, paprika, salt and pepper on both sides. Keep some of the spices for sprinkling over the vegetable.

3. Arrange chicken breasts into the prepared baking dish, and drizzle with oil. Top chicken breasts with the bell peppers and onion, then sprinkle some of the remaining fajita seasonings. Finish the casserole with shredded mozzarella cheese on top.

4. Bake the fajita chicken casserole for 20 – 30 minutes (if you split the chicken breasts lengthwise, or depending on the thickness); until chicken is cooked through and reaches an internal temperature of 165°F (74°C). You can broil your fajita chicken casserole for 2 minutes at the end to crisp up the top if you like. Serve the fajita chicken casserole immediately over cauliflower rice, steamed vegetable, zucchini noodles, or as is… enjoy!
