Tonight’s about eating all the colors! Alway, any meal, the more colors the better! Let’s get all those antioxidants in there! Yellows, oranges and reds always pack a beta carotene punch 🥊 and bell peppers are a great source of vitamin C which we can all use this time of year! I will serve this over a bed of spinach and my family will probably turn them into chicken fajitas in a wrap! I’m getting some great iron, folic acid and calcium from the spinach in addition to more beta carotene and vitamin C!

I’ve seen a few posts about genetically modified foods floating around, thought I’d post an article that is neither for or against, it does state that we truly don’t know what these foods will do to us in the long run, the alarming thing that stood out to me was how much gmo food is being fed to our food ie: cattle feed and the amount of our produce that is no longer natural. This is different than cross pollination or selective breeding as well. Have a read for yourself. This looks like a fabulous recipe! You can switch the cauliflower out for any vegetable you like! Any of the winter squash would be divine, beets would be wonderful too! If you change out the cauliflower for a more carbie veggie it will no longer be keto, but keep in mind for a lifestyle diet, our bodies and brains needs healthy carbs for fuel!

Now that I have my kombucha scobie and starter made from store bought kombucha, I’ll add it to a gallon of sweet tea to start my continuous brew kombucha. I’ll let it sit for a week or two and I’ll have my own probiotic rich daily kick start for pennies a day verse the $3.99 at the store. It can also be flavored with fruit juice and herbs and dried fruit with a second ferment, that will also make it a bit fizzier! I like adding mango! For the kombucha lovers out there, do you have a favourite flavor?

My favourite coffee replacement. It’s full of great adaptogens!!! what are adaptogens???? Adaptogens are natural substances that help our bodies cope with stress! This one has Reishi mushroom that helps you chill and Eleuthero (Siberian ginseng) which helps give you overall energy but not overstimulated like coffee. I find I can drink this in the afternoon or evening if I’m craving a coffee and it doesn’t affect my sleep like caffeine!

Have you tried a pomelo? They are the largest citrus fruit native to Southeast Asia, it has a similar but sweeter taste to grapefruit but is definitely less juicy a bit in the drier side. Pomelo are high in Vitamin C, copper and potassium, as well as antioxidants making it a great healthy snack!
