Thanks to my beautiful friend, for making my summer garden favorites come to life!! Tomato pie and Italian Sausage stuffed zucchini!

When someone puts in the time to tend to a garden AND make you something delicious, you savor every single bite!!!

You see, my philosophy of eating fresh foods from the ground up, allows me to enjoy these amazing summer veggies in unique way!!! Can’t wait for lunch leftovers tomorrow!!

It’s a holiday weekend and for most, that means a long one. What a great time to take a few extra moments to focus on the things that matter most to you. For me, those are FAITH, FAMILY, FRIENDS, FOOD, and FUN! 🥳

My Saturday started with a cup of Joe and quiet time over the water before a workout. Then, we plan to spend the rest of the day playing on the water, having quality time with family, and celebrating our country and independence! 🇺🇸

Here I am at the end of the spring sports (and other extracurricular activities) season and finally weeding my way through the chaos of getting the littles to 2 different places each night. It’s been challenging, to say the least.

Tonight’s dinner will be between a double header softball game and out of a Tupperware. I made these chicken parmesan wraps over the weekend (in 15 minutes) and wrapped them in parchment paper so they can easily be reheated, yet stay in tact when eating. Pair with a veggie, such as this beautiful broccoli from to round out the meal.

Inside these organic flour tortillas, you will find:
🍗precooked chicken such as rotisserie chicken or frozen shredded chicken
🍅jarred tomato/spaghetti sauce
🥬spinach from
🧀shredded mozzarella cheese

First run in a few weeks, and boy did it feel good! I set out to run 3 miles, not sure how I would feel, but it was an amazing morning and I felt great so I got in 5!

There are some days you aren’t feeling it and you make your self get out anyway. Then, you feel better afterwards. Other days, like today for me, the body craves it! Exercise is a huge stress reliever for me! It’s puts me in a good mood, and sets my intention for the day/week!

Here’s to a strong, productive, and positive week ahead!

Don’t think harder, think smarter! Use Your Resources!!🤓⏰

Dinner doesn’t have to be complicated to be delicious. I love to use for quick meals that are easy to prepare and nourishing for the body. I have shared some with you before but this is the first time for the Ramen. They feed 4 people for $20…much less than you can feed a family of 4 at a restaurant. As school activities start to pick up again, take a few extra minutes each weekend to think through your meals for the week. If you don’t want to cook every night, you don’t have to. But you do have to plan ahead.

THIS was inspired by one of my current clients!

I have been seeing an avocado toast as a part of a client’s repertoire of meals lately, and each time, I feel myself salivating! Today, my avocado was perfect, and I made it happen, along with a farm fresh egg from my Aunt Pam.

Guys, this is what a coaching/client relationship is all about. Inspiration…Motivation…Education…Confidence! While my job is to provide this to my clients, they don’t realize how much they do the same for me! Nutrition coaching is more than me just telling clients what to do, but rather giving them the tools to do this now and for the rest of your lives. Watching clients overcome obstacles and challenges they have known their whole life inspires me to do the hard things every day to help make me my beat self too.
