we’re back to the grid & we’re back with some very important affirmations for when you have those days where eating just seems really difficult!

whether it’s a bad body image day or you’re feeling anxious or you haven’t moved your body, it is still important to eat!!

eating less and skipping meals is something we shouldn’t be striving to do, regardless of the situation. the best way to show love to yourself on those difficult days is by nourishing your body with good food! and this can look different for everyone! it may involve eating food rich in nutrients or it may involve eating foods that just taste so damn good for the soul!

write these out in a journal, stick them on your mirror or make it your phone lock screen so you’re always got these affirmations in sight!

a post dedicated to some epic bowls of oats and the reason why this is basically my breakfast every single day:

- keeps me full! oats are jam packed with fibre, along with the fruit i add for toppings to add in satiety!
- keeps me energised all morning long! oats are a complex carb, which means that the carbs (or glucose) is slowly released into our bloodstream to give us longer lasting energy!
- you can make them balanced with all the macronutrients! oats by themselves aren’t really a balanced breakfast! but pair with some protein such as greek yoghurt or protein powder, healthy fats such as nut butter and chia seeds and you make it balanced! also adding some fruit ensures you’re getting a boost of vitamins and minerals!
- they taste INCREDIBLE! period! totally customisable but honestly i’ve been eating the same combo for 3 months straight now and i’m not sick of it!

lol s**e this isn’t your typical what i eat in a day video, but this is the only one you should be following and taking notes!

this isn’t supposed to tell you specifics (because everyone is different) but rather a general rule of thumb on what to include each and every day! that’s the key to a healthy relationship with food, a balance of the foods that provide an abundance of nutrition and satisfaction, but also foods that just make you so damn happy to be alive!

and just a friendly reminder to always take what i eat in a day videos you see online with a grain of salt. you never know if someone is being fully transparent with their eating, especially when it’s being posted online! you know your body best and if you want specific guidance, seek help from an accredited practicing dietitian, not a WIEIAD video!

mid week meal inspo..

tofu rice paper rolls
these hit the spot! using rice paper, add pan fried tofu, carrot, cucumber, avo, seaweed flakes & vermicelli noodles and roll!

strawberry oats
using vegan protein powder! cook your oats in the microwave and add a scoop of protein powder! i loaded the bowl with toppings, i added banana, strawbs, chia pudding & crunchy pb

loaded tamari tofu nourish bowls
very easy to make for lunch or dinner! fry your tofu in a pan and coat with tamari and garlic powder! add to a bowl of mixed leaves, brown rice, cucumber, carrot, avocado and seaweed flakes

crispy salmon japanese sweet potato bowl
THIS BOWL is an absolute chefs kiss! coat your salmon in tamari/teriyaki sauce and pan fry (or air fry if you have one). cook your japanese sweet potato (i do the microwave) and cut into chunks. add to a bowl mixed leaves, potato, cucumber, tomato, avo and your salmon!

choc protein overnight oats
an emma staple while on placement right now! the night before, add 1/2 cup rolled oats, 1 tbsp chia seeds, scoop choc protein powder (i use choc pea protein) and 1/2 cup milk of choice! then stir in 2 tbsp greek yoghurt. top with your desired toppings! i did banana, strawbs and crunchy pb!!

some meal inspo for you all…

choccy oats
microwave 1/2 cup oats with water or milk. stir in 2 tsp chia seeds, 1 tbsp cacao powder and a drop of honey. i added mixed berry yoghurt, nectarine and smooth peanut butter to my bowl!

5 ingredient veggie pesto pasta
how simple! cook your pasta until al dente (i used protein pasta for extra protein). meanwhile, pan fry your tofu until golden and crispy and cook your broccoli (i microwaved for convenience). drain your pasta and place back into saucepan. add 1-2 tbsp pesto, cooked broccoli, chopped tomatoes and cooked tofu and combine!

i LOVE pesto, can you tell? while frying your eggs, add 1 tsp pesto and swirl into eggs. i served my eggs with an everything bagel topped with light cream cheese, avocado and tomato! the best savoury breakfast for sure!

banana cinnamon overnight oats
overnight oats are my daily breakfast for the train ride each day! the night before, add 1/2 cup rolled oats, chia seeds and loads of cinnamon to a container and mix. add in 1/4 cup water/milk of choice, 1/2 cup greek yoghurt (i used ) and 1/2 mashed banana and combine. top with the extra banana, peanut butter, nectarine and more cinnamon!

falafel nourish bowl
this was INSANELY GOOD! i used the macro falafel mix to make my falafel. cook in a pan until golden brown. build your bowl with mixed leaves, cucumber, tomato, chickpeas, cooked falafel, avocado and hummus!

eating breakfast allows you will feel more energised throughout the day, it breaks that overnight fast so you can refuel your glycogen stores within the liver & actually helps improve your concentration levels!

food anxiety around christmas is something i’m no stranger to & i know a lot of others, maybe you absolute legend reading this right now, experience added stress & guilt during this time!

this time of year brings about extra socialisation, events & of course, more food! more food than usual, food at different times & places & just different foods in general!

but there are some ways to manage with your food anxiety this christmas! swipe across to take on board these reminders heading into the festivities in the next couple of days!

here is a BIG food dump of some of the meals i’ve been loving over the past month or so!

there was a time where i thought in order to be healthy, my diet needed to consist of boring, flavourless food. no pizza, no betty crocker cake, no pancakes. only foods that were whole & unprocessed.

but eating that way was actually the opposite of health! why? because i was restricting myself, depriving myself from the foods i enjoyed deep down & it not only eventually impacted my physical health but took a toll on me mentally & socially!

here’s your reminder: eating healthy doesn’t mean restriction. all foods can be apart of a healthy balanced diet! yes the pizza & yes the betty crocker cake!
