Clearly still working on my food photography skills... but this no-bake vegan cheesecake was delicious!!

After making it...
I'd recommend leaving the topping on the side beauseeee you mayyyy want to make smaller batches and experiment with different fruits.

I N G R E D I E N T S
CRUST
1 cup packed pitted dates
1 cup raw almonds

FILLING
1 1/2 cups raw cashews (quick-soaked*)
1 large lemon (I used 2 because I love a tart cheesecake)
1/3 cup coconut oil (melted)
2/3 cup coconut cream (**this is thicker than coconut milk)
1/2 cup agave nectar or maple syrup

TOPPING
~12 oz raspberries or fruit of choice
½ teaspoon fresh lemon juice
2 tablespoons maple syrup
2 tablespoons chia seeds

I N S T R U C T I O N S
1. Add dates to a food processor and blend until it's a sticky ball. Remove and set aside.
2. Next add almonds (or walnuts) and process into a meal. Then add dates back in and blend until it mixes. It should stick together when you squeeze a bit between your fingers.
3. Lightly grease a small/medium Pyrex with coconut oil. Then flatten your crust mixture. (You can store the Pyrex with the crust in the fridge/freezer as you work on the filling) (FILLING)
4. Add all filling ingredients to a blender (Taste and adjust flavor as needed.) Then spread filling on top of crust and put in freezer for 30 minutes.
5. Blend all topping ingredients and spread over filling.
7. Cover and freeze until hard - about 6 hours (I left mine over night) and ENJOY!

18 week bump update... waning crescent! 🌘

The baby journey's transitioning from it being mostly internal to slightly more external as friends start touching the bump.

Feeling so supported by and our circle with birth plan preferences and physical needs changing constantly.

I'm realizing how important it is to be selective with the energy you surround yourself with during this special time.

Sensory stimulus & environment,
People,
Food,
It's all energy and it's all molding baby (physically & personality-wise).

What an amazing time though!
I've been enjoying this process so much... Chet said the other day he's never seen me happier.😂🥰

My favorite thing to eat lately is just a big bowl of cooked vegetables, fresh (or cooked) leafy greens, a protein - lentils or beans, avocado, lemon, and some sort of whole food starch - organic basmati rice, sweet potatoes, or on a rare occasion baby potatoes. Sometimes I add seeds or drizzle tahini... it's fun to play around and get creative!!

Talk about a vibrant, nutrient dense meal that leaves you feeling energized and completely satisfied! 🌱

For centuries throughout India, Kichadi has been thought of as comfort food - similar to tomato or chicken noodle soup in the West. It’s nourishing and easy to digest, supporting healthy digestion, minimizing gas or bloating.

It’s been long cherished in Ayurveda for its gentle cleansing & detoxifying properties; bringing balance to the mind and body. Kichadi is even considered one of the MOST healing meals due to its Tridoshic nature - balancing all 3 Doshas.

Often people do a “cleanse” by eating this simple meal exclusively for 3-7 days. While it’s not technically a “cleanse” Ayurvedically, a Kichadi diet can support the body’s detoxification processes by giving the digestive tract a break from working on complex foods. This frees up more energy for clearing blocked channels and toxins from the system.

𝙄𝙣𝙜𝙧𝙚𝙙𝙞𝙚𝙣𝙩𝙨:

1 cup basmati rice
½ cup split mung beans (dal)
2 tsp ghee (coconut oil or avocado oil for vegan-friendly)
3-4 cups water
1" fresh ginger, grated
¼ tsp ground turmeric
½ tsp cumin seeds or powder
½ tsp coriander powder
¼ tsp cardamom powder
¼ fennel seeds
1 tsp salt
¼ tsp freshly cracked black pepper
Fresh herbs such as cilantro, dill or mint
*Option: Add carrots, celery, spinach & any other seasonal veggies or fresh lemon juice

𝘿𝙞𝙧𝙚𝙘𝙩𝙞𝙤𝙣𝙨:
Soak rice rice & moong beans 15-20 mins in warm water, rinse & drain.
Warm the ghee/oil in a large pot. Add turmeric, fennel seeds, cumin, coriander, cardamom & ginger. Stir & saute on med-low for 2 mins to release properties of the spices. Warm slowly - adjust heat so spices don't burn!
Add rice, mung beans, and all veggies (if using) except leafy greens with water, bring to low boil & simmer until tender - about 30-45 mins. Check periodically & add water if necessary - the consistency should be very moist/soupy. Stir in leafy greens at the end until wilted.
Garnish with fresh herbs of your choice and/or fresh lemon juice.

Still no noticeable bump to the outside world, but there's SO much happening internally for us during the first trimester.

The most important thing to remember is, pregnancy is a sacred journey and initiation into parenthood. It's time tune in and honor our body's intelligence. This includes giving ourselves permission to justttt restttttt.

Our bodies aren't only adjusting to the creation of a new human INSIDE of itself (which alone is mind blowing), but it's also creating an entirely new organ - the placenta - during this first trimester...
How incredible is that?!?!!!

So happy to finally start sharing this journey🤍✨

Me watching life unfold beautifully in her own timing; to her own rhythm...

It's so easy to lose patience from our tiny human perspective - I'm the master of this LOL.

But when we pause, breathe, recognize our blessings, show someone a little love and just take the next tiny step we can, we break the pattern that keeps us circling where we don't want to be...

Because until we have the ability to consciously break a pattern or cycle, it's exactly where we NEED to be.

That's why we're ALWAYS exactly where we need to be and if we want to move, we have to change how we internally respond to the external.

I now see why dreams can't come into fruition until the time is right.

As crazy as it seems, when you get to the point where you are truly living your dream you realize that there's nothing more to complain about...

And I know that that may sound wonderful, but there's an aspect of all of us that's addicted to the complaining & the pain. It gives us something to look forward to, so we don't have to do the inner work to accept each moment as it is.

Until we've reached a certain point of awareness and truly desire peace and happiness in the purest form, we will continue to manifest stress, chaos, suffering, and we will continue to block our dreams from becoming reality because we are not truly a vibrational match for them.

When everything you truly desire is RIGHT HERE, a part of you dies...

But it's in that ego death that you truly start living.

You have to realize and really feel that you deserve it - the peace, the happiness, the love.

Then trust;

And in the blink of an eye, it's all RIGHT HERE. 🤍✨

As says... Surfing is the Yang to Yoga's Yin.

He also says "There is wisdom in waves. Some surfers see it right away, others never do. To find success in surfing, we must learn to be in harmony with nature. This will bring a sense of peace. By sharing this peace, and contributing to other people's happiness, we can find the true meaning of life. Keep surfing."

And the exact same quote would be true if we replaced surfing/surfers with yoga/yogis.
