🍊 Orange Chicken—crispy, sticky, sweet with a kick!

It never hit me until now… you actually use real oranges?! 😳

You’ll need:
🐔 1 lb boneless chicken thighs, diced
🌽 ¼ cup cornstarch
🛢️ ⅓ cup avocado oil (or neutral oil)

Sauce:
🍊 1 cup fresh orange juice (about 5 oranges, pulp strained)
🍚 ¼ cup brown sugar
🍶 2 tbsp soy sauce
🍷 2 tbsp rice vinegar
🧄 3 garlic cloves, minced
🫚 ¼ tsp grated ginger
🌶️ ½ tsp red chili flakes
🌽 1 tbsp cornstarch (to thicken)

Garnish:
🌿Green onions, sesame seeds, orange zest

Steps:
1. Mix sauce ingredients, set aside.
2. Coat chicken in cornstarch.
3. Sear in oil until golden(5–6 mins/side). Drain.
4. In same pan, pour in sauce. Stir until thickened.
5. Toss chicken in sauce to coat.
6. Garnish + devour!

📚 This book was one of my first stepping stones.
I remember it feeling like a far-off dream—and now I’m here, more than halfway through my PA program.

Whether you’re pre-PA or in the thick of clinicals, remember: we all start somewhere.

PA school isn’t for the faint of heart, but it is for the persistent. 🫀 If you’re in that early stage, keep going. You’re more capable than you realize. 🩺

As a Registered Dietitian, I’ve always believed that medicine and nutrition go hand in hand. Becoming a PA is my way of bringing those worlds together—to treat root causes, not just symptoms.

One day, I won’t have to choose between clinical care and lifestyle medicine. I’ll get to do both—with a side of Botox. 😉

This Easy Salmon Meal Prep recipe is tender, flaky, nutritious, and the perfect option for a healthy dinner or lunch routine. I chose to toss it in a sticky, savory, and sweet sauce.

In general, the TOP tip I have for living a healthy lifestyle is making sure to set yourself up for success. With anything in life, if you fail to plan, you plan to fail. That applies to meal planning as well. Planning meals ahead of time increases the chance for success as you are likely to make healthier food choices.

Ingredients:

SWIPE for a mindset shift. Drop the all or nothing approach. If your gonna have a treat, don’t think these defeating thoughts 💭 Remember you didn’t cheat, you had a treat. True winners don’t win by cheating. Your doing a great job and keep going. Drop the guilt, it’s so unproductive and actually leads to more poor choices. Reflect on how you could of done it better and move on. The key is consistency. You got this!
