COSY HEALTHY 1 POT PASTA: the quickest and most comforting way to get a high fibre dinner on the table!! Pasta Kweens are going to love this one. Save it and give it a go 🥰

INGREDIENTS:
1 tbsp olive oil, divided
2 chicken breasts, diced
500g cherry tomatoes, halved
1/2 red onion, finely diced
1 tbsp fresh thyme
2 tsp minced garlic
250g pulse pasta
3 cups chicken stock
2 tbsp tomato paste
3/4 cup sliced Kalamata olives
1 cup grated parmesan
Large handful fresh basil

METHOD:
1. Heat 1/2 the oil in a large pan or pot over medium heat.
2. Add chicken and sauté until cooked.
3. Remove from the pan and set aside.
4. Heat remaining oil in the pan.
5. Add cherry tomatoes, onion, thyme and garlic.
6. Cook for 4-5 mins, stirring occasionally.
7. Add pasta and chicken stock.
8. Cover and bring to the boil, cook for ~8 mins.
9. Remove the lid and stir through tomato paste.
10. Simmer for 3 mins, or until pasta is cooked.
11. Stir through chicken, olives and basil.
12. Turn off heat and stir through 3/4 cup of the parmesan.
13. Serve topped with remaining parmesan and extra basil 🌿

NO BAKE BISCOFF SLICE: this is hands down one of the best no bake slices we’ve ever made!! And that’s a huge call 😂 6 ingredients & soooo satisfying, save it & try it!! 👑

BASE:
250g scotch finger biscuits
395g sweetened condensed milk
120g butter, chopped
⅓ cup Biscoff spread

TOP:
200g milk chocolate
2 tbs Biscoff spread
Biscoff biscuits to decorate

METHOD:
1. Blitz the biscuits until fine, set aside.
2. Add butter, condensed milk & ⅓ cup Biscoff to a bowl.
3. Microwave in 30 sec bursts, stirring in between, for 2 mins.
4. Mix in the biscuit crumb until well combined.
5. Press into a lined tin, pop in the fridge.
6. Melt milk choc & Biscoff spread together.
7. Pour evenly over the slice.
8. Top with Biscoff biscuits.
9. Refrigerate for 4 hours or until set & slice!!
