Thanksgiving Leftover Salad with Gluten Free Air Fryer Croutons!!! Make sure you SAVE this post! Dare I say that you might like this salad better than your Thanksgiving meal… 🤫
For the Gluten Free Air Fryer Croutons, grab 2-3 slices of Heritage Style Whole Grain . Let the bread thaw and slice into cubes. Place the cubes into a single layer in your air fryer. Spray with avocado oil and sprinkle with ½ tsp salt, ½ tsp ground black pepper and ½ tsp garlic powder. Air fry at 375 degrees F for 5-8 minutes until crisp.
For the dressing, whisk together 2 tbsp extra virgin olive oil, 2 tbsp fresh orange juice, 2 tsp dijon mustard, 2 tsp tahini, ½ tsp herbs de provence, ¼ tsp salt and ¼ tsp ground black pepper.
In a bowl add fresh spinach, cubed leftover turkey, sliced fennel, shaved parmesan cheese, cranberries (fresh or dried), chopped pecans and the air fryer croutons. Pour the dressing over the top, toss and enjoy!
