Brothy Eggs with Greens 🥬 🍲

Ingredients:
-2 cups bone broth (or fresh meat stock if you have histamine sensitivity).
-2 poached eggs (or add cooked chicken/protein).
-Handful of steamed baby bok choy or fresh dark leafy greens (collard, spinach, chard).
-1 tsp fresh ginger, chopped
-Sea salt and black pepper to taste.
-green onion.

Method:
Poach eggs. Arrange steamed greens and ginger in a bowl. Top with poached eggs. Pour hot bone broth over everything. Season with salt and pepper.

Why this works:
Bone broth delivers hydration, collagen, and minerals for nervous system support. Ginger stimulates digestion and circulation without overheating the body. Dark greens provide iron, folate, and magnesium for hormone metabolism and mood. Eggs bring choline and complete protein. This is a quick, bioavailable breakfast that stabilizes blood sugar and supports calm energy.

My new perspective on becoming healthy and loosing weight.

My ramen recipes have evolved. The evolution is a blend of all three styles: traditional, instant, and social media. I want them to be simple but at the same time not from a pack. You can then adjust however you feel fits you best and nothing is more ramen than that. ❤️🍜

Spicy Creamy Ramen
Serves 1

Ingredients
* 1 serving ramen noodles
* 2 Tbsp kewpie mayo
* 1 egg yolk
* 1 Tbsp chili oil
* 2 Tbsp heavy cream
* 1 tsp rice vinegar
* 1 tsp mushroom dashi powder (any bouillon will work)
* Salt, to taste
* ½ cup reserved noodle water
* 1 bunch enoki mushrooms
* 4–6 tteokbokki rice cakes
* 1 Tbsp butter
* A few handfuls spinach
* 1 scallion, sliced
* 1 crispy fried egg
* Chili oil
* Black sesame seeds

Add the Kewpie, egg yolk, chili oil, heavy cream, rice vinegar, mushroom dashi powder, and a pinch of salt to your serving bowl and mix until smooth. Sauté the enoki mushrooms until lightly browned. Sauté the tteokbokki in the butter for 2–3 minutes, then add a splash of water, cover, and cook until tender. Steam the spinach until wilted. Cook the ramen noodles according to package directions, reserving ½ cup of the noodle water before draining. Add the reserved noodle water to the sauce and mix until smooth and creamy, then add the noodles and toss until evenly coated. Top with the enoki mushrooms, tteokbokki, spinach, scallion, crispy fried egg, a drizzle of chili oil, and black sesame seeds.

Tomato Parmesan eggs
The most indulgent breakfast ever!

Ingredients

* 3-4large tomatoes, halved 🍅
* 3 eggs 🥚
* 2 tbsp tomato paste🍅
* 2–3 cloves garlic, finely chopped 🧄
* 1–2 tbsp garlic confit (optional)
* A generous handful of freshly grated Parmesan 🧀
* Salt, to taste 🧂
* Freshly cracked black pepper
* Fresh parsley 🌿
* Olive oil, if needed 🫒

Method

1. Place the halved tomatoes cut-side down in a cast-iron skillet. You can also use a non-stick or stainless-steel pan.
2. Season with a little salt, cover with a lid, and cook over medium-low heat until the tomatoes soften and their skins start loosening, about 5–8 minutes.
3. Using tongs, carefully peel the skins off the tomatoes. Once peeled, smash the tomatoes directly in the skillet.
4. Add the chopped garlic and cook for about 30–60 seconds, just until fragrant.
5. Stir in the tomato paste, garlic confit and another pinch of salt. Mash and mix everything together until you have a chunky, saucy tomato base.
6. Add a generous amount of grated Parmesan and stir it through the tomato mixture until melted and creamy.
7. Make three little wells in the sauce and crack in the eggs. Cover with the lid and cook on medium-low for about 5 minutes, or until the whites are set while the yolks remain deliciously jammy.
8. Remove the lid and add another generous layer of Parmesan over the eggs. Finish with freshly cracked black pepper and chopped parsley.
9. Cook uncovered for another 1 minute, allowing the Parmesan to melt into the eggs and slightly set.
10. Serve hot with crusty sourdough or toasted bread for scooping up all that tomato-Parmesan goodness.

2. Use a substitute so you don’t feel left out.

3. Just stop or taper off. (I prefer to stop)

3 drinks to avoid if you have inflammation.

If your memory feels foggier than it used to be, it might not be “just getting older” it could be what you drink regularly.
