My ramen recipes have evolved. The evolution is a blend of all three styles: traditional, instant, and social media. I want them to be simple but at the same time not from a pack. You can then adjust however you feel fits you best and nothing is more ramen than that. ❤️🍜
Spicy Creamy Ramen
Serves 1
Ingredients
* 1 serving ramen noodles
* 2 Tbsp kewpie mayo
* 1 egg yolk
* 1 Tbsp chili oil
* 2 Tbsp heavy cream
* 1 tsp rice vinegar
* 1 tsp mushroom dashi powder (any bouillon will work)
* Salt, to taste
* ½ cup reserved noodle water
* 1 bunch enoki mushrooms
* 4–6 tteokbokki rice cakes
* 1 Tbsp butter
* A few handfuls spinach
* 1 scallion, sliced
* 1 crispy fried egg
* Chili oil
* Black sesame seeds
Add the Kewpie, egg yolk, chili oil, heavy cream, rice vinegar, mushroom dashi powder, and a pinch of salt to your serving bowl and mix until smooth. Sauté the enoki mushrooms until lightly browned. Sauté the tteokbokki in the butter for 2–3 minutes, then add a splash of water, cover, and cook until tender. Steam the spinach until wilted. Cook the ramen noodles according to package directions, reserving ½ cup of the noodle water before draining. Add the reserved noodle water to the sauce and mix until smooth and creamy, then add the noodles and toss until evenly coated. Top with the enoki mushrooms, tteokbokki, spinach, scallion, crispy fried egg, a drizzle of chili oil, and black sesame seeds.
