30 minute Air-fryer dinner for two 🥘
- 1 large sweet potato 🍠
- 2 carrots 🥕
- 2 sweet corns cut from the cob 🌽
- 4 zucchinis 🥒
- 1 can chickpeas
- olive oil
- salt & pepper
- dried basil & rosemary
- ground cumin
Method:
- dice all the veggies into bite sizes and throw into a mixing bowl
- drain and rinse the chickpeas and add to bowl
- add a drizzle of olive oil and season to taste
- 20-25 minutes in the air-fryer at 200 degrees
You can swap the chickpeas for bacon or chicken 🥓🍗
