I’m incredibly grateful to see my PhD research recently shared by the University of the Free State.

At the heart of this work is a simple idea: practical, accessible nutrition can make a real difference, especially in communities where resources are limited.

It’s a reminder that meaningful change doesn’t always come from something complex. Sometimes it’s about creating solutions that fit into people’s everyday lives.

Marita’s Black Quinoa & Blueberry Salad

High in fibre. Rich in nutrients. And yes — it actually keeps you full.

Here’s how I build it:

Basil pesto cream (Woolworths) as the base
1 cup black quinoa (cooked according to package instructions)
100g roasted flaked almonds
1½ cups blueberries
2 rounds feta, crumbled
1 pack micro leaves

This bowl gives you:
✔️ Plant protein
✔️ Healthy fats
✔️ Antioxidants
✔️ Fibre for gut health and steady energy

A salad can absolutely be satisfying — if you build it properly.
