**Brown Butter Cookies**
Gluten-free✅ Refined sugar free ✅

Ingredients
1 cup of cane sugar
1 small stick of butter (113g)
1 egg
1 cup gluten-free all purpose flour
3/4 cup almond flour
1 tsp baking powder
Generous amount of chocolate chips
Pinch of salt

Method
Heat the cane sugar and butter over low heat until the sugar has dissolved and the butter has browned.
Add all the remaining ingredients consecutively.
Mix well and refrigerate for at least 20 minutes.
Then bake for 25 minutes in a preheated oven at 315F.
Best served fresh and warm.

**Caramelized Coconut Cake**
Free of: Gluten, Dairy, Grain, Refined Sugar ✅✅✅✅
Oh & one of the best cakes I’ve made!

Ingredients
1 whole orange, blended with peel
4 eggs
1 + 1/3 cup allulose OR 1 cup coconut sugar
2.5 cups almond flour
2 cups shredded coconut, unsweetened
1 tsp baking powder
Handful of chocolate chips

Method
Start by blending one whole orange with its peel.
Combine it with all the listed ingredients, adding one at a time.
Mix well.

**Flourless Fudge Brownies**
This was an experiment; I initially wanted to bake cookies, what I got instead was one of THE BEST fudge brownies ever!!
Bonus: it’s flourless, gluten/grain/refined sugar free✅ and only 5 ingredients ✅

Ingredients
2 eggs
10 dates soaked in hot water for 10 minutes then mashed into a purée
1.5 tbsp cocoa powder
Handful of chocolate chips
1/2 tsp baking powder

Method
In a large bowl combine all your ingredients.
Bake for up to 20-25 minutes in a preheated oven at 320F.
Serve warm or at room temperature.
Enjoy ☺️

**Caramelized Onion Hummus**
My favorite twist to classic hummus✅

Ingredients
1 onion, sliced
1 tbsp olive + 1 tbsp butter
2 cups cooked chickpeas
3/4 cup tahini
Juice of 2 lemons
1 tsp garlic powder
1 tsp paprika
Generous pinch of salt and pepper
1 ice cube + dash of water to blend

Method
Start by caramelizing the onion in olive oil and butter until it turns golden brown.
Add to a blender your caramelized onions, chickpeas, tahini and seasonings.
While blending add an ice cube (improves texture) and a splash of water until it is very smooth.
Serve with a touch of chili 🌶️ & olive oil.

**Orange Blueberry Cake**
Gluten-free ✅ Refined Sugar Free ✅

Ingredients
1 whole orange
3 eggs
1 cup coconut sugar
1 cup almond flour
1/2 cup all purpose gluten-free flour
1 tsp baking powder
2 tbsp olive oil
1-1.5 cups blueberries (fresh or frozen)

Method
Slice the orange and add to a blender along with the eggs and coconut sugar.
After blending, pour your mixture in a large mixing bowl and add the flours and baking powder. Then add the olive oil.
Last fold in the blueberries.
Mix and bake in a preheated oven for 25 minutes at 350F.

** ‘Dirty’ Protein Matcha**
A fun functional drink 🍹

Ingredients
1/2 tsp matcha
1 tsp instant coffee
1/4 + 1/4 tsp coconut sugar
1 cup almond milk
1 scoop vanilla protein powder
1 scoop creatine
1 scoop inositol- optional if you take it (female hormonal supplement)
1/2 cup ice
Hot water

Method
Add the matcha powder to a cup and the instant coffee to another.
Add coconut sugar to each.
Cover in boiling water just enough to be able to whisk.
Whisk until smooth and set aside.
In a blender, add the ice, almond milk, protein powder, creatine and any other supplement.
Blend until getting a creamy texture.
Pour in a tall glass and pour over it the matcha then the coffee.

**Double Chocolate Bounty Bars**
Vegan, Gluten/Refined Sugar Free

Ingredients
4 cups unsweetened shredded coconut
3/4 cup coconut sugar
2 tbsp cocoa powder
1/2 cup almond milk
2 cups melted dark chocolate

Ingredients
Blend all ingredients except the melted chocolate for only 1-2 minutes (keeping the coarse coconut texture).
Shape into bars or balls and freeze for 30 minutes.
Dip each frozen bar/ball into melted chocolate.
Store in the fridge or freezer.

**Zesty Cookies** 🍪🍊
Gluten-free ✅ Refined Sugar Free ✅

Ingredients
1 egg
1 cup all purpose gluten-free flour
1/2 cup almond flour
1/2 cup oat flour
1 tsp baking powder
Zest of an orange
1/4 cup coconut oil
3/4 cup coconut sugar
2 tbsp maple syrup
1/4 cup melted dark chocolate

Method
Mix all ingredients except the chocolate in a large bowl until well combined.
Refrigerate for 30 minutes.
Then bake in a preheated oven at 320F for up to 25 minutes.
Drizzle melted chocolate and enjoy 😉.

**High Protein Flourless Brownies**
Made of lentils! Yes you are reading correctly.
Gluten-free ✅ Grain-free ✅ Refined Sugarfree ✅

Ingredients
2 cups of cooked lentils
2 cups of melted dark chocolate (70%)
3 eggs
3 tbsp coconut sugar
1 tbsp maple syrup
1 tbsp cocoa powder
1 tsp baking powder

Method
Blend all ingredients together until smooth.
Pour into a baking dish and cover with chocolate chips.
Bake in a preheated oven for up to 25 minutes at 325F.
