Noticed small clumps in your Matcha? That’s often a sign of quality.
Matcha is an exceptionally fine powder that naturally absorbs moisture from the air. Because of its tiny particle size and naturally occurring amino acids and oils, the powder can form small clumps over time.
Premium Matcha is especially prone to this. The same compounds that create its vibrant colour, silky texture and rich umami also make it less free flowing.
For this reason, Matcha has traditionally been sifted before preparation. A quick sift creates a smoother, creamier bowl and allows the full character of the tea to shine.
