Part 5/5 of my toastie series, and I’m ending it with the condiment I’ve been known to eat straight from the jar…this is my Beerenberg Farm balsamic beetroot, roast beef & feta toastie.

The beetroot brings sweetness, the feta brings salt, the roast beef brings savoury richness, and the mint cuts right through it - all encased in golden, crispy sourdough. What more could you want in a winter comfort meal? 👀

Part 4/5 of my toastie series: Crispy Chicken Schnitzel, Rocket and Mozzarella with ’ Tomato Chutney.

If you love a crispy chicken schnitzel + a sweet tangy chutney combo, this is going to become your new winter staple. It’s everything you want in a winter toastie: golden crunchy, melty and so moreish. And if you don’t have schnitzel on hand (or can’t be bothered making it), a good-quality store-bought crumbed chicken works just as well. 🥪

New recipe: Crispy Pork Schnitzel with Fennel and Green Olive Salad 🫒

Ingredients 
1 pack Olga’s Fine Foods 🇦🇺 Pork Schnitzel
Extra virgin olive oil, for frying 

For the dressing 
2 tbsp extra virgin olive oil 
2 tbsp freshly grated parmesan, plus extra for serving
1 tsp lemon juice
Zest of ½ lemon 
1 tsp Dijon mustard 
Pinch of salt and pepper 

For the salad
1 large (or 2 small) fennel bulb, shaved
2 tbsp chives, finely chopped
2 tbsp dill, roughly chopped
¼ cup green sicilian olives, pitted

Method 

1. In a large bowl, combine the dressing ingredients, then add the shaved fennel, chives, dill and olives. Toss well to combine and set aside.
2. Heat a generous layer of extra virgin olive oil in a large frying pan over medium-high heat. Once hot, cook the pork schnitzels in batches (don’t overcrowd the pan) for 3-4 minutes each side, or until golden, crisp and cooked through. Transfer to a paper towel-lined plate and season lightly with salt.
3. Divide the schnitzels between plates and serve with the fennel salad. Finish with a grating of parmesan.

New recipe inspired by the kings of chicken salad (Baker Bleu & Falco) the classic chicken sandwich with UMAMI PAPI | Chilli Oil & More’s chilli egg mayo, on PROVE’s rye sourdough.

All the best bits: crunchy, creamy, moreish…and not a sad, lonesome lettuce leaf in sight.

Part 3/5 of my toastie series: a French onion soup-inspired toastie with Beerenberg Farm’s caramelised onion, Swiss gruyère and peppery rocket (a match made in heaven).

I’ve also made a version of this with thinly sliced ribeye, and it makes for the perfect hearty, rich winter meal.
