ot threatening, in an environment that is both exciting and educational and enhances social cohesion, and where people can feel good about themselves and their abilities to prepare healthy family meals. BushWok Cooking is centrally located in Alice Springs and provides nutrition promotion services to remote communities in South Australia, Western Australia, Queensland as well as the Northern Territory. BushWok Cooking is a for-profit social enterprise that works at the urban town camp and remote Aboriginal community level and has pioneered the strategy of facilitating large-scale outdoor participatory catering events and cooking competitions, an innovative "edutainment" approach to promoting and reinforcing healthy cooking and eating where it is most needed, OUT BUSH. Our aim is to stimulate public health nutrition action through sharing healthy food preparation and cooking skills and techniques, and to inspire all of our clients to become healthy cooking and nutrition ambassadors for better public health. This is achieved through promoting and promulgating an engaging and uplifting community-focused program that:
- brings community together around healthy cooking and eating
- is mobile, self contained, and can be conducted anywhere the community wants
- is an inclusive "whole-of-community" event, and engages 50 to 70 community residents - women and men, young people and old people - all preparing and cooking food together at the same time
- produces a quick, nutritious, fresh and tasty banquet for up to 200 community members to share and enjoy
- has a strong nutrition, health promotion and community-building focus, and
- encourages participants to adopt healthy cooking and eating practices for the long term. BushWok Cooking complements the nutrition promotion services provided by others and provides an engaging educational activity designed to motivate and trigger the adoption of improved cooking techniques. Making healthy cooking and eating both desirable and rewarding motivates people to modify their food preparation practices so that new cooking behaviours can become sustainable habits. These outdoor events also provide an opportunity to share healthy lifestyle choices to help reduce the risk of developing preventable chronic diseases, including:
- Eating healthy food;
- Doing regular physical exercise;
- Seeing a doctor annually for check ups and management of any existing illness;
- Giving up smoking (or not taking it up); and
- Drinking alcohol at safe levels or not at all. This not only ensures that your overall program is a social triumph, but also contributes to community harmony and wellbeing through the goodwill and afterglow that lingers in the community following these positive uplifting events.

An absolutely beautiful and happy team-building lunchtime event at the Alice Springs Telegraph Station today for DASA staff. To our good fortune the weather was prefect.

When everyone had arrived thirty people formed 5 teams to prepare and cook one of the following dishes:
Thai Green Chicken CurryStir fried beef and broccoliChickpea and butternut curryStir fried prawns and vegetablesCoconut Fish Korma

The group did not stop laughing the whole time they were there. All the dishes were deliciously cooked and made a wonderful lunchtime feast when served with steamed rice.

There was truely enjoyable Cooking chaos at Papunya yesterday afternoon, a remote community 250kms Norwest of Alice Springs.

This is the first time in 15 years of nutrition promotion that has been requested to facilitate a healthy cooking competition at Papunya.

15 years is a long time coming.

Indeed, so shocked were the potential cooking participants that it took a while for them to realise that this event was more than just another boring, greasy, health depleting sausage sizzle.

A healthy cooking event provides a unique opportunity for health professions to ENGAGE PEOPLE IN THE PROCESS OF COOKING A HEALTHY MEAL.

To the participants’ surprise, each table was loaded with a colourful array of fresh healthy vegetables to be combined in the cooking process with beef and a small selection of umami-enhancing condiments - sans table salt per se.

Ten teams formed and fought against enormous odds (ie developed familiarity with the cooking equipment) to produce their best version of “Meat and Vegetable Stew” from the variety of ingredients available.

When all of the cooking teams had placed their cooking effort on the tables, four independent and “blinded” taste testers awarded scores out of 10 for each sample tasted. Scores were summed, double checked, and then third, second and first places were announced (in that order) to enormous applause.

And then IT WAS TIME TO EAT!!!!!

150 plates of rice were served to participants, onlookers and bystanders to be combined with the copious quantities of healthy meat and vegetable stew produced by each of the 10 cooking teams.

facilitated a cooking competition for Community Care clients at Santa Teresa today. Seven teams competed for 1st place to cook the tastiest chicken and vegetable stew. Team 3 won 1st Place with teams 1 and 5 being runner up’s. The group enjoyed a lovely sunny warm beautiful winter’s day in Central Australia. My abundant thanks go to the support given by Congress Nutrition staff.
By the way I walked 9kms thru and around the cooking competition today.

Cooking travelled to Tennant Creek for the Tennant Creek Mob Aboriginal Corporation to facilitate two outdoor cooking competitions, one on Friday (July 3rd) night and another on Saturday (July 4th) night at Mulga Camp on the northside of Tennant Creek.

On each night, around 50 local children formed 7 teams and received guidance and mentoring from their respective team leaders to help cook their meal. Once cooked, a sample was taken from each wok and the impartial judges taste-tested and awarded 3rd, 2nd and 1st Place to huge applause from the onlookers and helpers.

And then it was time for everyone to get a bowl of rice and help themselves to the healthy and vegetable-rich food.

Yum!!!

Fun night at Pmara Jutanta (6 Mile) last night with 10 community teams cooking up a healthy vegetable-rich feast for 100 members of the community.

Thanks to everyone who participated for making last night a great night.

This 75 year old codger did 20,000 steps (or 13 kilometres of walking) and 400kms of driving to deliver this event yesterday.
