**Spinach and Mushroom Breakfast Wrap:**
Ingredients:
- 1 whole wheat tortilla
- 1/2 cup egg whites (or 2 whole eggs)
- 1 cup fresh spinach leaves
- 1/2 cup sliced mushrooms
- 1/4 cup diced tomatoes
- Salt and pepper to taste
- 1/4 cup shredded low-fat cheese
Instructions:
1. In a non-stick pan, sautΓ© the sliced mushrooms until they're lightly browned and tender.
2. Add the diced tomatoes and fresh spinach leaves to the pan. SautΓ© until the spinach wilts.
3. In a separate pan, cook the egg whites (or whole eggs) to your preference. Season with salt and pepper.
4. Warm the whole wheat tortilla in a dry skillet or microwave for a few seconds.
5. Place the cooked egg, sautΓ©ed vegetables, and shredded cheese in the center of the tortilla.
6. Fold in the sides of the tortilla and then roll it up into a wrap.
