A moment of reflection - as as we glided through the last days of autumn, I found myself drawn to the comfort of seasonal recipes that warm both the body and the soul. In the quiet, creative space of my kitchen, over the past few weeks, I’ve been flipping through my trusty recipe file compendium and scrolling through Drive on my iPad; I stumbled upon a little gem from years past — pimiento and tomato soup. 🍅🫑

This isn’t just any soup — it’s the kind that fills your kitchen with a divine aroma, making you pause and inhale deeply, savoring the cozy anticipation of cooler days ahead. It’s incredibly simple, ready in about 15 minutes, making it perfect for a quick lunch or a nourishing treat on a busy day. A dollop of sour cream on top, and suddenly, it feels like a little celebration in a bowl. 🍜

Winter is a season of slowing down, and indulging in small pleasures. This soup is my reminder that even in the rush of life, there’s always time to enjoy something delicious, comforting, and soul-satisfying.

When it comes to nutrition, I aim to think outside the circle when it comes to healthy solutions to prep meals in a busy week as part of a menu plan. The pimiento and tomato soup is an old favourite I haven’t prepared for many years - a bonus, the recipe can be cooked in a microwave in the background, in between working on other projects, then whizzed in a blender or food processor ready to serve. 😋

I love nothing better than a cosy Sunday afternoon heading into evening, than cooking and creating in the kitchen. 🧡 Check out my process of creating super easy and tasty smoked salmon and asparagus quiches.

Tip: Quick fix - I use Pampas light pastry sheets, cut out the size with a Chinese soup bowl to fit a 10cm flan tin; prep the filling while baking and blind baking.

A light meal served with rocket, drizzled with a quality extra Virgin olive oil with a pinch of sea salt, or heat in a sandwich press for a quick lunch.

Baked with meaning today ❤️

Anzac biscuits have always been more than just a recipe — they’re a reminder of strength, mateship, and the stories that shape us.

In honour of Anzac Day, I’ve made a batch to share (recipe attached) — simple, wholesome, the perfect blend of crisp + chewy, and made to be enjoyed slowly.

There’s something grounding about going back to basics… oats, golden syrup, coconut — no fuss, just nourishment and tradition.

However you’re spending today, I hope you find a moment to pause, reflect, and maybe bake something that feels a little bit special.

These last mangoes 🥭 from Summer have been sitting in my fridge slowly ripening. It was on the menu plan last week to prep a mango chicken salad, not to be. The flesh was less firm; reinvention - one was the hero ingredient in a sliced raw cheesecake, the cheeks were sliced on the other, scooped out and frozen to be enjoyed during the cooler months to come. 😊
