Healing Garlic, Ginger & Vegetable Soup Recipe

Ingredients
1–2 tablespoons olive oil
1 brown onion, finely chopped
3–4 cloves garlic, crushed
1 thumb-sized piece of fresh ginger, grated
1 teaspoon turmeric powder, or fresh grated turmeric
1–2 teaspoons dried thyme, or a few fresh sprigs
2 carrots, chopped
2 celery sticks, chopped
1 zucchini, chopped
1 cup pumpkin or sweet potato, chopped
1 cup leafy greens, such as spinach, silverbeet or kale
1.5 litres vegetable or chicken broth
Juice of ½ lemon
Sea salt and black pepper to taste
Optional: shredded chicken, lentils, chickpeas or white beans for extra protein

Method
Warm the olive oil in a large pot.
Add onion, garlic and ginger, and gently cook until fragrant.
Stir in turmeric and thyme.
Add carrots, celery, zucchini and pumpkin or sweet potato.
Pour in the broth and simmer for 20–30 minutes, until the vegetables are soft.
Add leafy greens in the last few minutes.
Finish with lemon juice, salt and pepper.

Serve warm and enjoy slowly.
