I love making a bulk amount of this to have for meals over a few days. I have it with steamed veggies, or with rice, or sourdough bread. Being high protein and high fibre, it makes a great breakfast, lunch or dinner 💛

Ingredients:
1 Kg of mince (use whichever mince you like - yes chicken mince will work too)
1 tablespoon of ghee
2 spring onions
3 cloves of garlic
A sprig of fresh oregano
1 chopped carrot
1 chopped capsicum
2 chopped tomatoes
A few leaves of silverbeet - chopped
1 tin of kidney beans
1 chopped fresh chilli (or chilli flakes to taste)
2 teaspoons of ground cumin
2 teaspoons of paprika
2 tablespoons of tomato paste
A splash of apple cider vinegar
Salt and pepper to taste

Melt the ghee in a deep frying pan and add garlic, spring onions, cumin and paprika.
Stir until fragrant, then add mince.
Stir until partially cooked, then add the remaining vegetables, chilli, kidney beans, tomato paste, oregano, apple cider vinegar and a little water.
Simmer on low heat, stirring occasionally.
Add salt and pepper to taste once cooked.

How’s your sense of vitality lately?

Many of us know what supports our health. We know we need to move our bodies, nourish ourselves well and find ways to release stress. Yet despite our best intentions, we can still feel exhausted, flat or overwhelmed.

💛Had a lovely stay at the gorgeous Gold Coast with beloved family.

🥳Michael won an award for the best local identity portrait painting in the Bridgetown Archies exhibition. The exhibition is at the Bridgetown visitors centre until June 30

Inner guidance doesn’t always arrive as certainty, clarity, or a loud “yes”.

Sometimes it speaks more quietly - through the body, the heart, a subtle feeling, or a gentle awareness that asks us to pay attention.

Many of us move through life disconnected from these subtle cues, dismissing them as overthinking, exhaustion, or coincidence.

Yet these quiet nudges can be invitations to slow down, tune in, and reconnect with our own inner wisdom.
Inner guidance doesn’t require you to have all the answers. Often, it simply begins with noticing.

Thai Pumpkin Soup

A nourishing winter warmer to soothe the soul and support your wellbeing 🧡

Ingredients:
* 1 tablespoon of coconut oil
* 1 onion chopped
* 2 tsp grated ginger
* 2 tsp powdered turmeric
* 8 kaffir lime leaves
* 2 tsp fresh ground lemongrass (I buy the tube of it)
* 1 tsp ground coriander
* Fresh or dried chilli
* 1 sweet potato chopped
* 1 butternut pumpkin, peeled and chopped
* 275mL can of coconut cream

To make:
* Sautee the onion in coconut oil.
* Add the ginger, turmeric, kaffir lime leaves, lemongrass, coriander and chilli.
* Stir for a minute or two and add the pumpkin, sweet potato and salt to taste and cover with filtered water.
* Bring to the boil and simmer until the vegetables are soft.
* Mash or process and then mix in the coconut cream.

For something extra special and a protein boost, you can top the soup with a sprinkle of chopped cashew nuts and pepitas and serve with sourdough bread.
