What a lot you have โ€œseenโ€ in your little life so far. Not long after you entered the world our county literally caught on fire and if that wasnโ€™t devastating enough the world then shut down as we know it meaning that some of closest family havenโ€™t even met you yet ๐Ÿ˜ข

Lunch during the week can be such a bore! Especially when weโ€™re mostly making it ourselves these days! Whether youโ€™re working from home or looking after little ones youโ€™re probably after something QUICK and HEALTHY and SATISFYING. But how often do those three words end up in the same sentence? Not very often! Particularly when weโ€™re time poor. And letโ€™s be honest, who isnโ€™t!

And even if I were to have a whole lot of time on my hands, Iโ€™m really not very interested in spending any longer in the kitchen than I have to! Do any of you feel the same?

I made this mixed up version of a Greek salad today because I am so sick of my go-to mixed leaves as the base of my salads! And it ticked all the boxes! What are your go-to iso lunches?

*NUT BUTTER CUPS | I had every intention of homemaking all my Easter treats this year now that I have so much โ€œspare timeโ€ on my hands but these *Nut Butter Cups were the only ones that eventuated! It was my first time making homemade chocolate which was really easy and much more delicious than I expected!

If anyone fancies making some of their own here in the recipe which is a classic combined bastardisation of a number of different recipes I found online.

For the chocolate, combine:
- 1 cup cacao butter (melted)
- 1 cup cacao powder
- 50ml maple syrup (or to your desired sweetness)

For the filling, whip with electric beaters:
- 1/3 cup nut butter of your choice (I used homemade ABC butter here)
- 2 tsps butter
- 1 tbsp maple syrup

Divide half the melted chocolate into 8 silicone cups. Freeze โ„๏ธ Divide all the nut mix on top of the frozen chocolate. Freeze โ„๏ธ Pour the remaining chocolate on top of the nut butter layer and sprinkle with sea salt. Freeze โ„๏ธ Enjoyed best frozen โ„๏ธ (I tried them from the fridge too but the filling was too soft).

The part of this new reality weโ€™re living in that I struggle with the most is not knowing when Iโ€™m going to see my family again. We have no family in NSW, they are all in QLD or overseas and thereโ€™s no telling when we might be together again.

I was meant to be with my parents and Freya on the Sunshine Coast right now. Just as Iโ€™m sure so many of you had plans to go away or see family & friends with Easter approaching.

Donโ€™t get me wrong, more than anything I am so grateful that everyone is safe and well and for the wonder that is FaceTime, but it just isnโ€™t the same. Jumping on a plane to be with my family is something that I have always just taken for granted - I hope I never will again.

Right now I feel like the next chance I get to hold them in my arms (or anyone that doesnโ€™t live under my roof for that matter), I will never want to let go.

Please stay safe and keep doing the right thing so we can all get back to those we love as soon as possible ๐Ÿ’›๐Ÿ˜ข

Making the most of the divine fresh food and time we have with a little (a lot!) help from ๐Ÿ’š This spiced peanut sweet potato salad is next level good!

I really encourage everyone to keep eating a fresh food diet as much as possible at the moment. Keep all those perishables you have in your pantry incase you really canโ€™t go to the shops for a while and support your local grocers and butchers whenever possible to help keep them in business ๐Ÿ™๐Ÿป

What a bizarre time we are living in right now. As someone who loves to plan ahead and organise my life the uncertainly is killing me! What do I do next? How can I prepare? How bad will it really get? How can I avoid the panic? And how can I look after myself and my family whilst still being considerate of those around me? Particularly those who are more needy.

Sitting in a moment of peace this morning I found myself asking even more questions like - Will there be enough food on the shelves tomorrow? Will I have enough to feed my family? Will my husband still have a job tomorrow? When will I be able to see my interstate and overseas family again?

And then it dawned on me - these are questions that some people will be asking themselves every single day of every single year, global pandemic or not. It made me realise just how much we take our access to food, income and family for granted. For so many the thought of no food on the shelves or on the table, or no income is just an ordinary day. So letโ€™s try not panic. This is not permanent, count your blessings, and letโ€™s get through this together.
