A friend told me this story recently. 😅

Apple Radish Kimchi Rice Balls 🥢

Ingredients:
• 2 cups cooked and cooled rice
• 2–3 tbsp GUTSY Apple Radish Kimchi, finely chopped
• 1 clove garlic, minced
• 1 spring onion, finely sliced
• 1 tsp kimchi brine
• 1 tsp rice wine vinegar (or red wine vinegar)
• Nori sheets, cut into strips
• Sesame seeds, to serve

Simply mix, shape into balls, and finish with nori and sesame seeds. Easy, delicious, and gut-loving. 💚

A piece of falling roofing metal severed my achilles tendon completely last year.
