My name is Jane I am a mum of 3 gorgeous, healthy boys who have lead me on this path of Wholefood cooking, gut healing, restorative foods and wild fermentation. Fermented Carrots 2 ways 🥕

As you well know by now I can’t resist pretty produce in season, these purple carrots just happen to fall in my cart when doing our organic wholesale order this week.

Carrot stick pickles have been a household staple for well over a decade. The boys still love them just as much today as they did when they were little.

Then with the peel I decided to have a little fun, as I have a drinks workshop coming up with Cessnock City Council, and make a Carrot Peel Soda.

Much like a wild soda made from apple peels or mango seeds, all you need is water, sugar, and the carrot skins. As the naturally occurring yeasts on the skins begin to feed on the sugars, fermentation gets underway. Carrots are naturally rich in carbohydrates, which helps fuel the process and create a lightly sparkling, slightly sweet, refreshing drink.

Now, let’s take a moment for the incredible colour of these carrots and thank Mother Nature for being so gosh darn amazing.

Being a mum of 3 boys (men), we go through a lot of food. They come home starving from work and school and I’m always trying to have something easy on hand for those afternoon times.

Soups and dips are my fall back because both are easy to make and I don’t feel like I’m cooking an extra meal.

Monday was pumpkin soup with some kimchi paste for that tang and heat, today is this Beetroot Kvass Hommus.

Perfect for pre soccer/gym, also perfect for my breakfast with avocado and an egg.

Here is how I made it.
2 cans drained chickpeas
2 TBS tahini
2 cloves garlic
A good slosh of Beetroot Kvass
A generous drizzle of olive oil
Good pinch of salt
Juice of 1 lemon
1 tsp cumin

Blend until smooth.

Depending on your brand of chickpeas this may require more or less liquid, I find some chickpeas are really waterlogged and mushy. If your hommus comes out more like a smoothie than a dip you can blend in more chickpeas if you have them or turn this into a creamy salad dressing by pumping up the acid and salt and tossing it through roasted veggies and quinoa.

POSTPONED DUE TO FORECAST.
We hate cancelling events but looks like Thursday is meant to be a doozy and rather than have your little ones out getting soaked to the bone, we have decided to postpone this workshop for Thurs July 2nd.

Our apologies for any inconvenience caused, the decision was made in the best interest of those attending.

Being the first week of school holiday this next date is expected to fill up fast so please jump onto .play and secure your spot if you would like to come and join us.

If you have purchased a ticket and cannot make the new date please let us know so we can issue a refund.
