High protein breakfast muffins 🥚

A meal prep breaky option for the savoury girlies 🤠

12g protein + 2g fibre per muffin
Makes 8 muffins, recommended servings is 2-3 for breakfast or 1-2 for a snack ⚡️

Ingredients:
•6 eggs
•300g cottage cheese
•1 tsp garlic powder
•1/2 tsp dried oregano
•1/2 tsp chilli flakes
•salt & pepper to taste
•1 can lentils, drained
•1 large carrot, grated
•2 spring onions thinly sliced

Method:
1. Preheat oven to 180.
2. Whisk together the eggs and cottage cheese until combined (it will be lumpy due to the cottage cheese).
3. Add the seasonings and veggies and mix together.
4. Pour evenly into 8 greased muffin holes.
5. Bake for 25-30 minutes or until cooked through and lightly browned.
6. Store in the fridge and heat in the microwave for 60-90 seconds when you’re ready to eat them!
