Sauerkraut!

You literally chop the cabbage up, add salt, mix it, leave it for a few hours then massage and pop it into whatever anaerobic vessel you want to use.

I won’t see this batch now for a MINIMUM of 4 weeks, possibly longer but it’s so worth it.

Homemade sauerkraut is teeming with good bacteria once finished and a small amount with most meals does wonders for our microbiome and digestion 🙌🏼

Thank you again for those of you who made it to my 4th session!

This one was on GAPS Intro and as I’ve been going through this protocol, I’m hoping it makes sense.

So far I’ve covered the microbiome and gut lining, how keeping the environment and epithelial integrity is crucial for optimal function and robust health.

I’ve talked about some of the conditions which we consider a GAPS issue, what’s going on and how the GAPS protocol comes into it.

Full GAPS was covered in the third series - this is very much a wholefood version, still very healing and nourishing and often the protocol we begin people on.

My last one went over GAPS Intro. Often using Full GAPS to help transition onto Intro because lots of healing has already taken place. Intro can be used after acute illness, used as a reset or for specific conditions.

I’ve also demonstrated some of the foundational foods that are prepared on GAPS;

Sauerkraut
Meat Stock
Beetroot Kvass
Sour Cream

All attendees get the chance to watch, taste, ask questions and sometimes take something home.

These monthly catch ups bring me so much joy and I am deeply grateful for the support and being able to break it down and just get together with you all.

Of course this couldn’t happen without the space! have allowed me to use the shop, bringing us together and where I can do demos - it couldn’t be more fitting.

I looked back at what GAPS has helped us with over the last year or so and not only has it supported myself and my family but I’ve been able to teach, share and help others.

Here are some things that have improved • resolved • supported • or that I’ve learnt …

~ Constant skin flares
~ Persistent dry, swollen lips
~ Hair loss
~ Staph Infection
~ Detoxification
~ Teaching and sharing with my community
~ Blood sugar balance/more protein/satiation
~ Clearing liver congestion
~ Resolving constipation
~ Getting outside more often
~ Connection with my family

GAPS is not only healing foods, it is fixing function, it is nervous system regulation, detox and drainage support, it’s there to hold your hand and to fall back onto when times are tough or something just needs that bit extra.

This page has always been to share better habits and not everything is GAPS but I think we could include a little bit of GAPS in our every day or dive right in when absolutely prepared. I share because I believe in it.

Did they taste it? No. But we do eat organ meat regularly. “Spag bol” is the PERFECT dish to add a little extra nutrient dense goodness into.

Here’s a simple little go-to for those times when you just feel a bit meh…

Activated charcoal is a binder used to help grab toxins and move them out of the system. Although it’s important to have our detox and drainage pathways working and clearing, activated charcoal can support this process by giving our system a little less work by binding onto toxins so they don’t recirculate.

It can be useful for;

• when you’ve picked up a tummy bug/diarrhoea (draws moisture into stool to help slow things down)
• drank or ate something that doesn’t agree with you
• when actively clearing drainage pathways and you have a die-off reaction
• before a sauna

I look for organic charcoal sourced from coconut shells. Be sure to take it an hour from supplements and 2 hours from medication. Remember it binds so you don’t want to take it with something you’re taking for other reasons. A few capsules followed by a glass of water or some powder mixed in water at bedtime is easy. The powder will discolor your teeth and glass temporarily!

There are some other types of binders used for various other things but this is a great one to start with and have on hand.

My fourth GAPS learning Series is on this Thursday and it’s on GAPS Intro.

I find it quite interesting and Intro is the one you go to when that stubborn symptom or health condition won’t resolve.

Intro is also the protocol that many people have heard of, look into it, freak out and don’t go there - but it’s not always the first step… but boy does it deliver if you go there!

I’d love you to come along, I’m enjoying being this info into my community and of course it’s an opportunity to interact, ask questions and see some easy food prep ideas in person.

I am so grateful to have such amazing people in my life to have helped our family out recently - and this gave me an idea to do the same for someone else.

I also know times are tough right now with rising living costs and people have to prioritise certain things and let other things go. I don’t want this to be your health because we need it more than ever.

I’ve purchased a coffee for the next person after me but they don’t know who paid for it, I’ve paid for someone’s shopping when I noticed they didn’t have enough money, I’ve sent flowers to someone during difficult times. And now, I’ve had beautiful things come my way. I don’t do these things for anything in return but I believe when you put it out there to the universe - it hears.

This of course helps me because I get to meet new people and gain experience but most of all - pass on my knowledge to YOU!

A client recently asked me whether coconut water kefir and kombucha are allowed on GAPS…

And YES! They both are. We want to consistently introduce a variety of different strains of beneficial bacteria and yeasts into our microbiome daily.

This won’t “fix” your gut problems alone, but doing so is one of the pillars of GAPS. Some people may not tolerate fermented dairy or vegetables well initially, so these are a great option for those people.

Both drinks need to be fermented long enough so all the sugars have been digested and Leigh all ferments, begin with a small amount and work up.

Last month I talked about the Full GAPS protocol and this time it will be Intro. This is the one many people have heard about and is the reason behind why people think GAPS is difficult. Let me run through it and talk about how and when we would use this version.

And of course there will be a “kitchen table teaching” on sour cream 🐮
