This one was a winner 😍

I added chicken breast to this mango quinoa salad recipe and it made the perfect high-protein lunch prep for the week 🌿🥭🥥

Made even better with my home grown finger limes + fresh herbs from the garden 🍋✨

Fresh, vibrant, full of texture and such a good mix of sweet + savoury 👌

Quinoa is also a great addition to meals because it contains fibre, slow-digesting carbs and is one of the few plant foods that contains all 9 essential amino acids 🙌

Approx per serve:
✨ 610 calories
💪 44g protein
🥑 23g fat
🌾 54g carbs
🌿 7.5g fibre

These crispy spring onion pancakes have been on repeat lately. Filled with chicken mince, avocado, kimchi, homemade pickled onion, lettuce & a little satay sauce 😍

You could also use roast chicken for a super quick option.😉

One serve approx:
💪 Protein: 35–40g
🍞 Carbs: 30–35g

A little Mother’s Day appreciation post 💛

This weekend was full of good food, laughs, slowing down and making memories with Mum ✨

We saw the most amazing show at the theatre, explored the city, enjoyed some beautiful meals, and finished the weekend with an amazing Egyptian show & lunch today thanks to my beautiful daughter and partner, who took us out with his family

A good reminder that health and wellness isn’t just workouts and routines…
sometimes it’s connection, joy, rest and spending time with the people you love most 💚

And to all the mums out there — whether you’re raising little ones, grown kids, fur babies, supporting others, or simply doing your best every day… I hope you felt appreciated this weekend too 🌻💕
