🍃Corn chowder was the soup of the day today at our sourdough workshop with the very knowledgable Michael Carter.
It paired beautifully with the Cheddar & Jalapeno Sourdough he made.
Unfortunately no photo of the the bread as it all disappeared pretty quick!
🍃Corn Chowder
90g butter
2 large onions, finely diced
1 garlic clove, crushed
1 tsp cumin seeds
1 tsp cumin powder
1 L veggie stock
2 potatoes, diced
Tin of creamed corn
Tin of corn kernels
3 Tbsp parsley, chopped
125g cheddar cheese, grated
Chives to garnish
🍃Heat the butter.
Add onions & cook medium to high heat until golden.
🍃Add the garlic & cumin seeds & powder.
Stir fry for a minute or two.
🍃Add the stock & bring to a boil.
Add the potatoes & simmer for 10 minutes.
🍃Add the creamed corn, corn kernels & parsley.
Bring to a boil, then simmer for 10 minutes.
🍃Stir through the cheese, season & serve topped with chopped chives & some delicious sour dough!😋
