In the old days, ice cream was a fairly wholesome treat. Made with cream, eggs, and a little sugar.

But in the low fat-era, we replaced wholesome foods with fake foods. How do they get the creamy texture without the cream?

Here are the ingredients in one popular brand: Water, Sugar, Milk Solids, Vegetable Oil, Glucose Syrup (Wheat), Maltodextrin, Dextrose Monohydrate, Vegetable Origin Emulsifiers [477, 471 (Soy)], Halal Gelatine, Vegetable Gum (412), Flavour, Colours (100, 150d).

I don't know about you, but I don't want to eat that.

Keto ice cream can be made with 4 simple ingredients: cream, egg yolk, vanilla and stevia. 5 for chocolate.

Remember when eggs were limited to absolutely no more than 4 a week? Of course there is now no limit on eggs in the dietary guidelines because they eventually realised their mistake.

But because of this history, people still worry about it, and I still get asked the question, "Can we eat too many?" I have always loved the Diet Doctor's response to this, which I heard when we both spoke at the Low Carb Summit in South Africa back in 2015.

He said, "No more than 36 a day—you may grow tired of them". 😉

How many do you eat a day? I eat at least 3 a day, and if I don't have meat in the house for some reason, I have been known to eat 9.

One of the times I was on A Current Affair years ago, people would see me in the store and say...

“Oh! It’s the butter lady!” 🧈😂

That segment gave a LOT of people permission to eat butter again 🙌

But it also stirred up plenty of controversy. One person even wrote to me and said:

“Great you’re following your passion… but try not to kill people!” 😳

Amazing, isn’t it that you can load butter onto your plate and people can say:

“That’s SO much butter!”
“Jeez, you’re going to have a heart attack!” 💔

Yet no one bats an eyelid when someone is demolishing sugar 🍰🍬🥤

Well… I’ve been eating generous amounts of butter for about 24 years 🧈🍳

And I have no plans to stop.

We actually NEED quality animal fats for:

✔️ Just about every bodily function
✔️ Hormone function
✔️ Especially feel-good hormones

Wow!!! Goodbye low-fat guidelines — at least in the U.S.

The old food pyramid has been flipped on it's head...and it's been such a long time coming.

🔻 Grains are now right down the bottom — and in the smallest section
🔺 Fats have moved right up to the top alongside meat and other animal proteins

And here’s the best part👇

There are NO sweets on this pyramid. Not even a tiny “sometimes” section.

And I LOVE that there is a pic of whole milk and...a tub of butter!!

Now let’s hope Australia follows suit 🇦🇺

Sweet cravings ruining your goals? 🍰

A few days ago, someone said to me:

“I do OK all day… but at night I need something sweet — and that’s my downfall.”

But keto doesn't mean no sweet treats...

✨ This buttermilk panna cotta:

- Takes 15 minutes to make (no joke)
- Is keto and full of good fats

I usually just set it in small dessert dishes (easy + no fuss). But it turns out beautifully if you want to plate it from a mould and have a bit of fun 🍮

Happy new year! From my little family (incl animal family) to yours!

I would love to hear about your achievements last year and your goals for this year.

I didn't make my muscle up last year but I did improve in the gym a LOT, and I learned how to do a V-up (a super hard type of sit up). And still loving keto after 20+ years. And I have been making chocolate protein ice cream so we can have a daily treat AND hit our protein goals all in one. So good!

My goals for this year: keep trying for a muscle up and keep improving in the gym. With my damaged lung, CrossFit has changed my quality of life, so it really is a must for me. And I love the idea of building as much muscle as possible to prepare for my 60s and beyond. Longevity expert Dr Peter Attia says that our 40s and 50s are the best time to do that.
