Capsicums are our star of the show this week - bringing vibrant colour and sweet flavour to winter cooking! 🫑

This week, we’re celebrating these versatile veggies with a warming Onion & Capsicum curry recipe (by Cook With Kushi) that’s rich, fragrant, and full of goodness. Delicious served hot with any Indian roti, chapati, dosa, or steamed rice!

Time: 25min Serves: 4

Ingredients:
2 Tbsp vegetable oil
1 tsp cumin seeds
½ tsp turmeric powder
1 Tbsp cashews
¼ tsp asafoetida hing
1 large onion, finely chopped
2-4 garlic cloves, chopped
2 chilies, chopped
1 inch ginger, grated
2 tomatoes (or 3 Tbsp tomato paste)
2 capsicums, chopped
½ tsp garam masala powder
½ tsp chilli powder
Salt to taste

1. Heat oil in a non-stick pan on medium heat. Add cumin seeds, turmeric powder, cashews, and hing, and saute until the cashews become light golden in colour.
2. Add onion, garlic, chilies, and ginger and saute till onion becomes translucent for about 6-8 min. You can add salt while sauteing the onion, as this makes it cook faster.
3. Now, add chopped tomatoes and cook until they become soft.
4. Add capsicum, garam masala, chilli powder, water for desired consistency, and salt to taste, and cook for about 5 minutes till the capsicum is cooked.
5. Simmer it for 3-5 min so that the flavours blend.

With winter now upon us, we’re enjoying organic beetroot - vibrant, nutritious, nourishing, and perfect for the cooler months. Its rich earthy flavour shines in warming soups, hearty roasted dishes, colourful salads, or even pickled!

This week’s recipe for Beetroot & Barley Risotto by Clove Kitchen, has a nuttiness that perfectly complements the earthiness of beetroot. Together, they create
something rich and wholesome. Barley isn't as high maintenance as arborio rice, so you can walk away between absorption stages 👌

This is an earthy, wholesome dish that makes you feel good - just what we need as the days grow colder!

Come in and see us this week for all your ingredients ☺

Serves: 2 | Time: 50min

Ingredients:

4 cups stock
2 Tbsp butter
1 onion, diced
3 cloves garlic, minced
4 leaves sage, thinly sliced
1 organic beetroot, peeled and grated
3 Tbsp red wine
1⁄2 cup barley
1⁄2 cup parmesan, grated
Salt & pepper, to taste

To Serve:
Tasmanian walnuts, chopped
Parmesan, extra, grated

1. Bring 4 cups (1 litre) stock to a low simmer in a saucepan.
2. In another saucepan over medium heat, melt 2 Tbsp butter and add 1 diced onion, 3 diced garlic cloves and 4 thinly sliced sage leaves.
3. Sauté until soft, then add 1 grated beetroot and 3 Tbsp red wine, and sauté for another minute or so.
4. Stir through ½ cup barley, then pour in 1 cup hot stock, add salt and pepper to taste, then reduce the heat to low and stir until all the liquid is absorbed.
5. Keep adding the stock, 1 cup at a time, until completely absorbed.
6. Add ½ cup grated parmesan and stir to just combine. Taste and add more salt and pepper if needed.
7. Divide among bowls and serve with chopped walnuts and extra parmesan on top.
