Chicken & cheese tortilla wrap pockets - a delicious, quick and easy dinner the whole family will love! 🙌🏼

Ingredients (serves 4 to 5)
2 cups slow cooked Mexican chicken
3 high protein wraps, halved
½ red onion, thinly sliced
1½ cups grated cheese

To serve
Grilled corn
Salsa
Sour cream

Method 🍴
Preheat oven to 180°C fan forced.
Cut each wrap in half to make 6 halves.
Lay one wrap half flat and add a small amount of red onion in a triangle shape.
Top with slow cooked Mexican chicken, then sprinkle with grated cheese.
Fold the sides in to form a filled triangle quesadilla.
Repeat with remaining wrap halves.
Place the folded quesadillas into a cast iron dish or baking tray, fitting them snugly.
Sprinkle extra grated cheese over the top.
Bake for 20 to 25 minutes, or until golden and the cheese is melted.
Serve with grilled corn, salsa and sour cream and enjoy! 😍

✨ WRAP HACK ✨
Turn your wraps into delicious ice cream cones! The ultimate summer wrap hack 🙌🏼

You’ll need:
Simson’s Pantry mini wraps
Olive oil in spray bottle
Toothpicks
Tin foil

For the toppings:
Favourite ice cream flavours
Sprinkles
Melted chocolate
Cherries

How to make:
1. Cut Simson’s Panyry wraps in half and roll into cone shape
2. Secure cone shape by holding in with toothpick
3. Scrunch til foil into ball and put inside cone to hold shape while baking
4. Dip tip of cone into melted chocolate and sprinkles
5. Brush or lightly spray olive oil onto cone
6. Bake in oven for 12 mins at 180*C . Leave to cool.
7. Remove toothpick and foil before adding your scoop of your favourite ice cream flavours and enjoy! 🍦
