I’m going confess… I haven’t always been a lover of congee. Perhaps, because I was cooking it out of obligation, rather than love. That changed this year, studying with Andrew Sterman. His love and knowledge of food as medicine is rather inspiring.
White rice is a herb in Chinese Medicine. It’s harmonising for the Eartb element (Spleen & Stomach). It’s naturally sweet. The stock in this recipe is clear and delicate and is slowly absorbed by the rice during cooking, making it easy to digest. This is considered “Wet Food”, ideal for staying hydrated and nourished.
Lime and vinegar, with spring greens keep the dish vibrant and light. Supporting the energy of Spring and the wood element (to move up and out - like a tree).
I’ll be sharing more info on Yang Sheng in the coming weeks… if there are any topics you would like more knowledge on, please DM me.
Are you feeling the gentle upward movement of springs expansive energy or frustrated and stuck (is your Liver Qi stuck)?
Sending LOVE
