Made finger buns for the first time the other day! Suuuuper nostalgic 🥰

Dough Ingredients for 8:
- 400g bread flour
- 100g wholemeal flour (or sub bread flour)
- 7g instant yeast
- 1tsp salt
- 50g sugar OR 35g honey or pure maple syrup
- 1 egg
- 250mL warm milk
- 60g softened butter
- Optional: 1tsp cinnamon, zest of 1 orange, 3/4 cup sultanas

*Knead 8-10mins. Proof until doubled. Shape into 8 pieces and proof again until puffy.
Bake 15-18mins 170C fan-forced.
Optional: Brush with glaze (eg jam or butter).
Top with preferred frosting/icing and coconut.

Bought cottage cheese to try, decided I didn’t like it, so turned it into a dough for these pizza cheese sticks.

Ingredients for double the amount pictured:
- 1 cup cottage cheese
- 2.5 cups bread flour
- 1tsp instant yeast
- 1tsp salt
- 1tsp olive oil
- 1tsp honey

*Knead 6-8mins. Let rise until doubled (60-75ish mins, or longer if cold).
Knead 1/2 cup grated mozzarella through.
Shape: roll into rectangle and slice sticks.
Top with preferred toppings; I did tomato paste, garlic/onion powder, salt/pepper, Italian herbs, mozzerella cheese.
Leave for second rise, 15-20mins.
Bake at 200C fan-forced for 20-30mins.

Just like a chocolate milkshake… only crunchy!
Homemade coco pops! Still a treat, but healthier. 🤗 Only 5 ingredients 👇🏻 (And where I say puffed rice, I don’t mean rice bubbles - they have almost the same amount of sugar/nasties as coco pops! Try sourcing a 100% rice option from a health store.)

- 2 cups puffed rice and/or quinoa
- 1/4 cup cacao powder
- 1/4 cup pure maple syrup or honey
- 1/4 cup coconut oil
- Pinch salt

*Spread evenly on a lined baking tray. Baked for 10-15 mins at 150C, mixing half way.
Leave to cool - they will crisp up.

Biiiiiiig choc chip cookies for Mother’s Day 💕 A bit more indulgent (real sugar) than I normally go for, but a delicious treat that’s for sure. 🍪

Makes 8 biiiig cookies:
- 125g butter, melted
- 80g rapadura sugar
- 50g brown sugar
- 1 egg
- 1tsp vanilla
- 180-200g wholemeal spelt flour
- 1/2tsp baking soda
- 1/2tsp baking powder
- 1/2tsp salt
- 100-120g dark chocolate chips
- Salt sprinkle on top immediately after baking

*Press down and bake at 160C fan-forced for 9-15mins depending on size. Sprinkle salt over immediately after baking and leave to rest approx 10mins on baking tray.

Makes 9:
- 90g rolled oats
- 140g wholemeal slept flour
- 150g rapadura sugar
- 65g desiccated coconut
- 125g butter, melted
- 3-4tbsp honey
- 1/2 tsp baking soda
- 1.5tbsp boiling water
- Pinch salt

*Pre-heat oven to 160C fan-forced.
Combine dry ingredients (not baking soda).
Melt butter and honey together.
Mix baking soda and boiling water, and stir into butter/honey mix.
Combine wet and dry. Let sit 5mins.
Roll into balls; press down.
Bake 10-12mins. Let rest at least 5mins on the tray.

✨ MUM HACK ✨ Microwave custard!! 🤩

Ingredients to make about 1.5 cups thick custard:
- Approx 1.5 cups milk
- 3 egg yolks
- 1tbsp corn flour for softer/runnier custard or I did 1.5tbsp for a thicker custard
- 2-3tbsp preferred sweetener (I did honey)
- 1tsp vanilla
- Pinch salt

*Microwave 3 x 1 min intervals (3 mins total), mixing between.

I love being able to make/eat more traditional recipes again! I excluded many ingredients (largely animal products and refined sugar) from my diet for so long, and that really helped heal my gut (Crohn’s disease), but now that I’m healed I’m loving going back to some old school classics, such as scones, just consuming mostly homemade and therefore better ingredients ones.

Recipe for these below. 1 batch makes approx 6 large or 9 smaller scones. Enjoy!

- 360g plain flour
- 3.5tsp (1tbsp + 1/2tsp) baking powder
- 1/3 tsp salt
- 2.5tbsp honey or pure maple syrup
- 80g cold butter, diced
- 215mL milk + 2.5tsp vinegar left to sit for 5-10mins (or just use buttermilk)
*”Cut” the butter into flour/baking powder/salt. Mix remaining ingredients together.
Pat together on flat surface, 3cm thick. Cut scones.
Brush with milk and bake at 180C fan-forced for approx 20mins for small scones.
Cover with a tea towel for 5 mins to “steam” once out of the oven. Serve with jam and cream. I used jam. 🍓

Greek yoghurt and refined sugar free banana bread, recipe by Chat GPT 👇🏻 I requested the addition of seeds to boost protein content.

Nice and soft. If you have a sweet tooth, I would recommend upping the amount of sweetener used.

- 3 ripe bananas
- 3 Medjool dates, pitted
- 2 eggs
- 1/3 cup olive oil
- 3tbsp honey or pure maple syrup
- 1/2 cup full-fat Greek yoghurt
- 1 cup wholemeal spelt flour
- 1/2 cup plain flour
- 1.5tbsp chia seeds
- 2tbsp flaxseed meal
- 2tbsp h**p seeds
- 1/2tsp baking powder (only if banana isn’t very ripe; omit if banana is ripe as not needed and can cause loaf to collapse when cooking as too much acid)
- 1tsp baking soda
- 1/2 tsp cinnamon
- Pinch salt
- Optional: sprinkle of sesame seeds on top, and maybe an extra banana sliced to decorate the top too

*Soak the dates in hot water 5-10mins; strain and mash with a fork. Mix together all ingredients. Rest batter for 5-10mins. Bake at 170C fan-forced for 50-60mins.
