The whole cultivation process of Ceylon Cinnamon is based on years of tradition and practise, because it has been cultivated and processed from ancient times in Sri Lanka. Skills and techniques are handed down within the family members who is working as teams.

The whole cultivation process of Ceylon Cinnamon is based on years of tradition and practise, because it has been cultivated and processed from ancient times in Sri Lanka. Skills and techniques are handed down within the family members who is working as teams. Cultivated under Good Agricultural Practices (GMP), harvested, processed, packaged, stored & transported under hygienic conditions as prescribed in SLS 143, SLS 1562 & FDA.

We scraped peel off the inner bark of selective and matured Ceylon Cinnamon stems, first dried under a shade to curl then joined together by overlaps to form the length of 533.4 ± 50 mm (21 ± 2 inches) quill. Thereafter sun drying, if necessary after air curling process completed. Quills are graded and classify on the basis of quality, colour, foxing level, quill diameter and the total number of quill per kilogram.

The quality, unique rich aroma and the flavour of Ceylon Cinnamon quills (sticks) are determine by the level of volatile essential oil content of the particular dried inner bark and the grade of the Ceylon Cinnamon. Ceylon Cinnamon sticks contains minimum 1% of essential oil content ml/100g on a dry basis and the major essential oil type is Cinnamaldehyde (In between 70% to 75%). The maximum moisture content is 15%.

Note:
1. Selective and hand picked inner barks of Ceylon Cinnamon can be used to peel high grades of quills.
2. To avoid product counterfeiting, grading process performs according to the defined standards and guidelines.

Ceylon Cinnamon is graded accordance to the ‘Sri Lanka Standard Specification for Ceylon Cinnamon: SLS-81:2010 Standards’ of the Spice Council of Sri Lanka and the latest international standard for Ceylon Cinnamon is ISO 6539: 2014 Cinnamon (Cinnamomum zeylanicum blume) – Specification which prescribes the requirements, methods of sampling & test for the processed dried bark of Ceylon Cinnamon (Cinnamomum zeylanicum blume) supplied in the form of Quills (Sticks\ Bales) , Cut Quills (Cut Cinnamon), Quillings, Featherings, Chips & Ground Ceylon Cinnamon.

This unprocessed Ceylon Cinnamon cut quills and also adhere to the quality guidelines of European Spice Association (ESA).
