This is one of my favourite winter soups. It might not sound especially exciting at first , zucchini, celery, and broccoli — but somehow it just works. It’s simple, nourishing, and surprisingly delicious. You can easily adapt it with whatever you have on hand, which makes it one of those reliable, go-to winter meals.
This version has a little bone broth for extra nutrition, along with ginger and turmeric, which I love for warmth and flavour. I also usually add a spoonful of miso paste sometimes for another flavour background , which gives it a beautiful depth and makes it even more comforting.
It’s really versatile too. You can stir through silken tofu for added protein, or serve it alongside tuna, eggs, or a bit of grilled chicken , everything seems to work with it.
A true winter must. Try it and enjoy.
