Healthy Recipes - anzac bjcs - apple crumble and custard!
Also rioen hard avos!!

To ripen rock-hard avocados in 1 to 3 days, place them in a brown paper bag with a banana or an apple. These fruits release ethylene gas, which triggers the ripening process. Seal the bag and leave it at room temperature until the fruit yields

ANZAC Bics
1 cup plain flour (wholemeal and/or organic )
1 cup organic rolled (whole not quick) oats
1 cup dessicated coconut (if no coconut use extra cup of oats)
2 tablespoons golden syrup
3 tablespoons of melted butter
1tsp bi carb dissolved in 2 tabs boiling water
1/2cup brown (or raw) sugar
Mix all dry ingredients first then add melted butter with golden syrup ‘dissolved’ in it. Mix together add little warm water till you can take desertspoonfuls into little balls - put on tray - flatten out
Preheat oven to 170c - put Bics in - after about 8mins when looking golden - use a large fork and press down hard all over Bics - this makes them thin and hard - they take about 10-15 mins and when brown underside cooked!

Lynda’s crumble mix to go over thinly sliced apples for pie (approximately 5-6 lge apples sprinkled with cinnamon and brown sugar)
CRUMBLE
1 cup wholemeal (organic if possible) plain flour (SR is ok too)
1cup rolled organic oats
1 cup dessicated coconut (organic if possible)
1/2 cup brown (or raw) sugar
Mix all together
Melt 3 tablespoons of golden syrup ) if none then honey will do - add 2 tablespoons of butter and 1 teaspoon of mixed spice or cinnamon - mix into blended dry ingredients so it’s nice and crumbly (if needed add little warm water) - spread on top of apples - and bake at 180c for aprox 20-30mins till golden brown! Yum serve with custard and or icecream.

Home made Custard (like grandma made)
Heat 500ml (or 1 pint) milk - don’t boil
Separately - mix one egg, 2 tablespoons of sugar 2tsp of vanilla essence 1 tsp cornflour - now add 1/3rd cup warm milk and mix well then add to saucepan with rest of hot milk (not boil I g) LOW heat now and stir continuously (don’t leave it!) add a k**b of butter at end if you like.
