Meal Prep Monday - Slow Cooker Beef Stroganoff

Ingredients
- 500g diced beef
- 375ml beef stock
- 240g pasta
- 200g sliced mushrooms
- 1/2 brown onion, diced
- 1/2 cup cooking cream
- 2tb flour

Base
- 2 tb tomato paste
- 2 tb worcestershire sauce
- 2 tb dijon mustard
- 2 tsp paprika

1. Mix base sauce ingredients and set aside
2. Sear the beef in an oiled pan over medium heat, and once cooked, put into slow cooker
3. Add onions, base sauce, flour, & stock to the beef in the slow cooker, stir to combine then cook for ~3 hours on high
4. At the 3H mark, add the mushrooms and leave for another 60 minutes
5. After 4H, stir through the cream & serve with pasta & green veg. Top with sour cream or parmesan, plus salt and pepper

Ingredients
- Multigrain wraps
- Grilled chicken
- Hummus
- Greek salad
Bonus extras - olives, feta, sun-dried tomatoes, chickpeas, lentils, etc!

Meal Prep Monday - Slow Cooked Peri Peri Chicken

This one is morw of an ‘ingredient’ prep, but ensuring you have a tasty, versatile protein prepared helps to keep things on track during busy weeks!

Ingredients
- 2 chicken breasts
- 1 cup passata
- 1/2 cup peri peri sauce (I used nandos garlic peri)
- 1 packet peri peri seasoning (I used mingle)
- Top up with water to cover the chicken

Method
1. Pop everything into the slow cooked on low for ~6 hours, or until able to shred easily with a fork
2. Meal ideas:
- serve with a rice & lentil mix, and leftover veg,
- a toastie or wrap with cheese, spinach & capsicum
- over roast potato or wedges with corn salsa, cheese and a side salad
- as tacos or burritos
