Most people are told what to take out of their diet after a coeliac disease diagnosis.

Far fewer are shown what needs to be put back in.

And that’s where things can get tricky.

Because while a gluten free diet is the only treatment for coeliac disease, simply removing gluten doesn’t automatically mean your diet is nutritionally balanced.

Over the years, I’ve worked with many women who are doing an incredible job avoiding gluten, yet still struggle with fatigue, low energy, persistent symptoms, or concerns about whether they’re getting everything their body needs.

Sometimes it’s fibre.

Sometimes it’s iron.

Sometimes it’s calcium, iodine, or other nutrients that have quietly fallen by the wayside as eating patterns change after diagnosis.

This is why my role as a coeliac dietitian goes far beyond reviewing food labels and identifying sources of gluten.

As part of my consultations, I can complete a detailed dietary analysis using FoodWorks software to assess whether your gluten free diet is meeting your nutritional requirements and identify any potential gaps before they become bigger issues.

Because the goal isn’t just to be gluten free.

It’s to build a gluten free diet that supports your energy, gut health, long-term wellbeing, and confidence around food.

If your bowel habits are unpredictable, this might be one of the reasons why.

One thing I see all the time in clinic is people skipping meals because they can’t find gluten free food they trust, or because there simply aren’t any suitable options available.

Maybe you’re:
▫️ travelling
▫️ stuck in meetings
▫️ running errands
▫️ at a café, food court or petrol station with limited options

So you decide to wait until later.

The problem?

Your gut thrives on rhythm and routine.

Regular meals help stimulate regular digestive activity, while long gaps between eating can contribute to bowel habits feeling more unpredictable.

That’s why one of my favourite foundational gut health principles is:

💛 Regular meals for regular bowels.

Instead of skipping meals completely, think about what you can eat:

🍌 Banana + handful of nuts
🥛 Yoghurt
🥚 Boiled eggs
🧀 Cheese + GF crackers
🛒 A quick supermarket meal when cafés don’t have suitable options
🥪 Packing something from home when you’re unsure what’s available

Sometimes improving gut symptoms isn’t about another elimination diet.

Sometimes it’s about getting the foundations right first.

I’m Jessica, a coeliac and gut health dietitian… but also a mum of 3, someone living with coeliac disease myself, and very much in the thick of busy, everyday life (school runs, sports days, endless laundry… you know the drill).

And honestly, that’s a big part of why I do what I do.

Because I know what it feels like to be doing your best with food and health…
but still feeling:
▫️ tired
▫️ confused by conflicting advice
▫️ unsure if your symptoms are “normal”
▫️ or like you’re constantly second-guessing every bite

My work is about changing that.

“I wish I started working with you earlier.”

A sentence I heard multiple times this week from women with completely different stories — but one thing in common:

They had been struggling alone for YEARS before reaching out for support.

Some thought:
▫️ their symptoms were “normal”
▫️ they just had to live with bloating or fatigue
▫️ the gluten free diet was enough
▫️ they were “doing coeliac disease wrong”

One of the biggest nutrition gaps I see in women following a gluten free diet?
🌾 Fibre.

And it’s not because people “aren’t trying” - it’s because many gluten free staple foods are naturally lower in fibre and wholegrains.

Over time, this can impact:
💨 gut symptoms
🦠 gut microbiome diversity
⚡ energy levels
❤️ cholesterol
🚽 bowel regularity
🍽 fullness and satisfaction

That’s why I love simple additions like this berry chia jam.

It’s:
✔ easy
✔ affordable
✔ gut friendly
✔ rich in fibre
✔ packed with plant compounds that support gut health

RECIPE 🍓

✔️2 cups berries
✔️2 tbsp chia seeds
✔️Squeeze of lemon juice

1. Heat berries in saucepan until softened
2. Mash gently
3. Stir through chia seeds + lemon
4. Allow to thicken as it cools
5. Store in fridge and add to yoghurt, uncontaminated oats (if tolerated), smoothies or gluten free toast 💛

✨ Small additions can make a huge difference to overall fibre intake on a gluten free diet.

Coeliac disease guidelines are evolving 🌾

The latest international updates from the European Society for the Study of Coeliac Disease (ESsCD) highlight major changes in how adults with coeliac disease may be diagnosed, monitored, and supported long term.

Some of the biggest themes include:
✨ Earlier detection
✨ More personalised diagnosis pathways
✨ Better long-term follow-up
✨ Stronger emphasis on dietitian support
✨ Less invasive testing in selected people

BUT 🇦🇺
These recommendations are not yet routine practice in Australia, where biopsy remains standard care for most adults.

The biggest takeaway?
Coeliac disease management is about much more than “just going gluten-free.”

Going gluten free is often described as a simple dietary change.

But for many people living with coeliac disease, it becomes something much more layered than that.

It’s not just about avoiding gluten.

It’s the shift in how you shop, eat, travel, socialise, and think about food every single day.

It’s the disappointment when gluten free options don’t quite feel the same.

The constant awareness of labels, cross-contact, and “safe” choices.

The mental checklist running in the background even during simple decisions.

And over time, that can create a quiet emotional load that many people don’t talk about: feeling unsure, overly cautious, or like food has become more stressful than it used to be.

But here’s what I want you to know:

None of this means you’re doing it wrong.
And it doesn’t have to stay this way.

With the right guidance, coeliac disease can feel more manageable, food can feel more enjoyable again, and your diet doesn’t have to feel restrictive or overwhelming.

There is a way to feel more confident, supported, and in control of your gluten free diet—without food taking over your life.
