Your liver is constantly shipping fat out into the bloodstream, and it canāt build the ātransport trucksā (VLDL) to do it without phosphatidylcholine, which your body canāt make enough of without dietary choline. Run low, and fat starts backing up in the liver. Thatās the beginning of fatty liver (MASLD).
Egg yolks are one of the richest everyday sources of choline. It matters even more for women after menopause, who rely more on dietary choline than they used to.
The deep orange of a backyard yolk is a bonus: pasture access means more omega-3s and vitamin D than most supermarket eggs.
The catch: choline helps, but it isnāt a cure. Fatty liver is multifactorial: blood sugar, weight and overall diet all play a role, and anything suspected needs proper GP workup.
